Tasting
Colour
This red wine from Italy reveals an intense ruby colour, adorned with violet hues at its core, while retaining beautiful clarity and a full-bodied texture.
Nose
Highly complex, the bouquet opens with concentrated aromas of black fruits and ripe cherry. With aeration, it reveals notes of Mediterranean herbs and garrigue, enriched by subtle touches of cocoa, tobacco, leather, and black pepper.
Palate
Silky and velvety, the palate offers a generous depth supported by perfectly balanced acidity. The fine tannins integrate harmoniously, leading to a long finish marked by balsamic and spicy nuances.
Food and wine pairing
This wine pairs wonderfully with grilled red meats such as lamb chops, saucy stews, or rich pasta dishes accompanied by a meat ragout. It also enhances aged cheeses, Mediterranean vegetable gratins like eggplant parmesan, and dark chocolate desserts.

The authentic expression of a terroir from Puglia
The estate
Founded in 2004, the Gianfranco Fino estate has become an essential reference in the Puglia region of Italy. Now at the helm of the estate, Gianfranco Fino, together with his wife Simona Natale, manages a vineyard of approximately 23 hectares with a philosophy centred on excellence and environmental respect. By preserving old vines and refusing any synthetic products, the owner crafts authentic wines that showcase the local terroir, elevating the peninsula's production to the pinnacle of Italian winemaking.
The vineyard
Located in the Salento peninsula, the terroir enjoys a warm Mediterranean climate, tempered by breezes from the Adriatic and Ionian seas. The vines, averaging around fifteen years of age for this cuvée, are cultivated using the traditional gobelet method on red clay-and-limestone-rich soils. Planting density is high, but yields are drastically limited to ensure optimal berry concentration.
The vintage
2023 benefited from the warm, sunny climatic conditions typical of the Mediterranean, while receiving enough maritime influence to preserve a beautiful freshness throughout the growing cycle.
Winemaking and aging
The manual harvest takes place at dawn to preserve the freshness of the fruit. After careful sorting, the grapes are destemmed in the afternoon and then gently crushed. Maceration lasts two to three weeks in stainless steel tanks with strict temperature control and daily rack-and-return. The Salento Primitivo "Sé" 2023 is aged for approximately nine months in French oak barrels, half of which are new, with regular lees stirring. The wine is then bottled without fining or filtration.
