Tasting
Colour
The colour reveals a deep red hue, without being excessively opaque.
Nose
The nose opens with pure, vivid aromas of red and black fruits, evoking cherry, raspberry and blackcurrant. It then develops typical scents of garrigue, thyme and dried herbs, complemented by subtle spicy touches of black pepper and liquorice.
Palate
The attack is precise and direct, introducing a fleshy, enveloping texture. The whole is supported by a lovely acidity that brings plenty of freshness. The tannins, remarkably noble and perfectly silky, give structure to this wine, which combines power and elegance. The finish lingers at length on mineral and bloody notes.
Food and wine pairing
This red wine will pair beautifully with braised meats, such as lamb, or with game dishes accompanied by elaborate sauces.
Service and storage
Approachable in its youth, this Mas Cal Demoura 2022 has a structure that will allow it to age favourably in the cellar until around 2042.
The elegance and freshness of a great Terrasses du Larzac wine
The estate
Founded in 1993 by Jean-Pierre Jullien, Mas Cal Demoura quickly established itself as a benchmark in the Languedoc. Its name, meaning "one must stay" in Occitan, reflects an unwavering faith in this terroir. Since 2004, Isabelle and Vincent Goumard have been at the helm of the estate, continuing this pursuit of excellence. Located near Montpellier, the estate cultivates its vines with the utmost respect for the environment, holding biodynamic certification. It stands out for its commitment to producing authentic wines that reflect the full complexity of their place of origin.
The vineyard
Located at the heart of the Terrasses du Larzac appellation, the vineyard covers around sixteen hectares spread across the communes of Jonquières and Saint-Félix-de-Lodès. The vines, averaging thirty to forty years old, thrive at altitudes ranging from 250 to 400 metres on highly diverse soils composed of limestone scree, marl and clay-limestone. The Mediterranean climate, cooled by breezes from the Causse du Larzac and sea winds, encourages slow ripening. The estate follows biodynamic principles, fostering biodiversity and soil vitality.
The vintage
The year 2022 was marked by unpredictable weather conditions, with an unstable spring and summer punctuated by early rains and extreme heatwaves. Thanks to meticulous vineyard work and the use of biodynamic preparations, the vineyard was able to withstand these heatwave episodes, resulting in healthy berries with lovely natural acidity.
Winemaking and aging
The grapes are hand-harvested with a rigorous double sorting process. This Mas Cal Demoura 2022 is vinified plot by plot, using indigenous yeasts, in temperature-controlled stainless steel tanks. Extraction is carried out gently, by infusion, over a period of 15 to 45 days. The wine is then aged for twelve months in foudres, demi-muids and tanks, in order to preserve the brightness of the fruit without marking the wine with wood. After blending, the wine rests for a further four to six months before being bottled without fining or filtration.

This wine is made up of similar proportions of Syrah, Mourvèdre, Grenache, Carignan and Cinsault.
