Tasting

Colour
A deep, intense garnet colour, enhanced by brilliant violet highlights.

Nose
Highly expressive, the bouquet reveals aromas of black fruits such as blackcurrant, harmoniously blended with notes of liquorice, dried garrigue herbs and a subtle mineral touch.

Palate
The palate offers a velvety texture with soft, silky tannins. The balance is remarkable, combining the concentration of black fruits with a lovely vibrant acidity that brings a great deal of freshness.

Food and wine pairing

This red wine pairs wonderfully with beef dishes served with pepper sauce, spicy dishes or game. It will also enhance mushroom-based preparations as well as mature cheeses.

The elegance and complexity of a great Languedoc wine

The estate

Founded in the early 1990s by Jean-Pierre Jullien, the Mas Cal Demoura estate is a true benchmark of quality in the Languedoc. Its name, meaning "one must stay" in Occitan, symbolises a deep attachment to this land. Since 2004, Isabelle and Vincent Goumard have owned this vineyard of around sixteen to seventeen hectares. They passionately continue an environmentally respectful philosophy, showcasing the pure expression of the terroir to create wines of great precision and remarkable elegance.

The vineyard

Located within the Terrasses du Larzac appellation, around the village of Jonquières, the vineyard rises to nearly 400 metres above sea level. The vines, averaging thirty-five to forty years old, thrive on a mosaic of soils made up of stony limestone, clay and gravel. This terroir benefits from a Mediterranean climate tempered by cool winds descending from the Larzac plateau, encouraging ideal temperature variations for optimal grape ripening.

The vintage

2023 stood out for a growing season that was generally very favourable across the whole region, offering weather conditions conducive to the ideal development of the vine's growth cycle.

Winemaking and aging

For the Mas Cal Demoura 2023 vintage, fermentation takes place using indigenous yeasts in temperature-controlled stainless steel tanks. Maceration lasts between fifteen and forty-five days, with regular punching down of the cap. The wine is then aged for around eighteen months in half-barrels and small oak barrels. After blending, the wine rests for a further four months in stainless steel tanks or neutral vessels before bottling.
