Tasting notes
Colour
The colour reveals a delicate pale lemon-yellow hue.
Nose
Beautifully precise, the aromatic bouquet reveals notes of woody spice, tangy lemon zest, white plum and yuzu, offering a lovely mineral complexity.
Palate
Medium-bodied, the palate offers a vibrant salinity and refreshing acidity. The texture seduces with its creamy fullness resulting from lees ageing, balanced by a chalky phenolic grip. The wine stretches into a long, harmonious finish.
Food and wine pairing
This white wine pairs harmoniously with seafood such as oysters or scallops, delicate citrus-infused fish dishes, or poultry in creamy mushroom sauce. It also pairs very well with dishes featuring green vegetables and artichokes, as well as mature goat's cheeses.

The estate
Founded in 1990 by Jean-Marie and Maine Guffens, Maison Verget quickly established itself as a key reference in Burgundy, France. Born from a desire to showcase sometimes underrated terroirs, this structure stands out for its rigorous plot-by-plot approach and its unwavering pursuit of mineral expression. Since 2016, the talented winemaker Julien Desplans has been at the helm of the estate, brilliantly carrying forward the house's signature style of precision and authenticity, while continuing to benefit from the guidance of its historic founder.
The vineyard
This Mâcon-Vergisson wine comes from the "La Roche" plot, a high-altitude terroir reaching around 400 metres. North-facing, these vines thrive on shallow soils composed of decalcified ferruginous clay resting on a bedrock of Bajocian limestone. The estate practises a distinctive form of "non-cultivation" viticulture, limiting ploughing to a single annual pass and favouring continuous cover cropping to control the vine's vigour. This approach results in small, highly concentrated berries.
The vintage
The year 2024 offered moderate, gradual ripening conditions, particularly favourable for north-facing plots. The harvest, carried out very selectively over several successive passes, took place from 10 to 28 September, allowing grapes to be picked at optimal balance.
Winemaking and ageing
Each lot destined for the Mâcon-Vergisson "Sur la Roche" 2024 is pressed and vinified separately. Fermentation takes place in horizontal stainless-steel tanks or used barrels. Ageing on fine lees, lasting around six months, is carried out in ovoid and horizontal concrete tanks, with bâtonnage adapted to the wine's profile. The final blend includes a proportion of 25% new oak barrels. The wine is then bottled under screwcap or agglomerate cork to preserve its purity.
