William Fèvre : Chablis Grand cru "Vaudésir" Domaine 2024

There is more flinty minerality in Fèvre's delicious Vaudésir than in its classic Bougros; the fruit has a ripe, tropical edge of passion fruit and kumquat with a hint of verbena and spice. The grapes are from the southwest-facing 'adroit' slope that borders La Moutonne in thin soils that ripen grapes quickly. The fruit is gently pressed as whole clusters, fermented in stainless steel, then aged for a year in cask and a further six months back in tank.
