Blood orange and crunchy red berries on the nose. Dark, muscular and woody on the palate (a classic Saint-Estèphe!), quite tight and underdeveloped at the moment, but the quality of the tannins is exceptional. Spicy and peppery finish, good length. Still a baby but with great potential.

The medium-bodied, soft, round-textured, lively wine delivers its fruits, and touch of crushed stones on the back end with ease. Plenty of density and silky tannins, with cassis, cappuccino and cocoa beans, high freshness but with real juice and flavour behind. 3.6pH. 8% of press wine. Frederic Rouzaud's father bought this in 1995, and the estate then underwent 20 years of replanting, increasing the Cabernet Sauvignon in the vineyard. The results are clear. 80% 225l oak and 20% foudres, 50% new oak, 3.6pH. 50% new oak. Harvest September 3 to 23.

Aged for 18 months in barrels, 50% of which are new, for Pez 2025. With good intensity, the bouquet reveals notes of blackcurrant, a touch of cocoa and licorice wood. The oak ageing sits in the background and acts as an aromatic driver; it supports all the elements present—and that is exactly why it’s there! The creamy nature of the attack paves the way for a precise, powerful and perfectly balanced wine. While velvety, the tannins still have definition, allowing them to integrate the sharp edge of the acidic structure. A wine that combines energy and drive with exemplary harmony. All the elements complement one another without any taking over. A fresh, mouthwatering wine, punctuated by a persistent finish with a delightful aromatic echo that speaks to meticulous work.

Appearance
This wine reveals a beautifully intense colour, fully representative of the great wines of its appellation.

Nose
The bouquet is particularly expressive, blending floral and spicy aromas. Subtle notes of magnolia, lavender, rosewood and lemon verbena emerge, accompanied by aromas of perfectly ripe black fruits and a hint of cedar.

Palate
The attack reveals a deep substance, with a chalky, almost mineral character. The texture is both juicy and velvety, supported by perfectly integrated, elegant tannins. Flavours of blue fruits unfold before giving way to a long, harmonious, savoury and mouth-watering finish.

Food and wine pairings

This cuvée will pair wonderfully with red meats in sauce, such as a beef bourguignon or a rack of lamb with herbs. It will also enhance dishes featuring black truffle, game, as well as full-flavoured cheeses such as an aged Comté or a Roquefort.

Serving and cellaring

To fully appreciate this vintage, serving at a temperature of 15.5°C is recommended. In its youth, decanting for one to two hours is advised, while a more gentle decanting will suffice for more mature bottles to remove the sediment. This wine offers excellent ageing potential and can be cellared for 10 to 18 years, with a peak expected around 2035-2040.

The elegance and power of a Saint-Estèphe wine

The estate

Founded in the 15th century, Château de Pez is a historic property in the Bordeaux region. This 42-hectare vineyard passed through several illustrious families before being acquired in 1995 by the Champagne house Louis Roederer, its current owner. Under the leadership of Jean-Claude Rouzaud and Nicolas Glumineau, the estate has significantly modernised its facilities. Certified HVE 3 for its sustainable practices and recognised as a Cru Bourgeois Exceptionnel, it now stands as an essential benchmark, combining tradition and innovation to produce wines of remarkable precision.

The vineyard

Located west of the commune of Saint-Estèphe, on the edge of Pauillac, the terroir extends over 42 hectares, of which 39 are currently in production. The vines, averaging 25 years old, are planted at a high density of 8,000 vines per hectare on gravel mounds with a clay-limestone subsoil. This bedrock ensures excellent drainage while providing a valuable water reserve. The estate applies the principles of sustainable viticulture, incorporating biodynamic methods and meeting the strict criteria of environmental certification to preserve biodiversity.

The vintage

The year was marked by hot and dry conditions, but the growing cycle benefited from a spring offering generous rainfall. The clay soils played a crucial role in regulating water supply, enabling the vines to withstand the summer drought. Budburst took place in early April, followed by flowering in late May and veraison observed between 30 July and 2 August. The harvest ran from 3 to 23 September. The bunches featured a low number of berries, favouring a beautiful concentration of flavours.

Winemaking and ageing

The production of Château de Pez 2025 relies on a highly precise plot-by-plot approach. Fermentations take place in wooden vats and temperature-controlled stainless steel truncated conical tanks. The wine is then aged for 18 months in barrels, 50% of which are new and have undergone a medium-long toast. Finally, clarification is carried out traditionally by fining with egg whites. Alcohol content: 13% vol.
