Tasting Notes
Appearance
The colour reveals a very deep red hue, reflecting a beautiful concentration.
Nose
Wonderfully complex, the nose opens with aromas of candied black fruit and warm spicy notes. With aeration, it reveals an elegant floral dimension, complemented by hints of black truffle, liquorice, incense and pencil shavings.
Palate
The palate combines controlled power with a velvety tannic texture. Featuring a particularly juicy freshness, it offers rich, distinguished character, supported by a firm, tight structure with a long finish.
Food and Wine Pairing
Ideal with game meats such as venison fillet or wild boar, this French red wine also pairs beautifully with matured beef, veal or milk-fed lamb. It works perfectly with rich Mediterranean cuisine, grilled vegetables, as well as characterful cheeses such as Maroilles.
Serving and Cellaring
For an optimal tasting experience of the Les Carrétals 2024 vintage, it is recommended to decant the wine and serve it at a temperature of around 17°C. Built for long-term ageing, it can already be enjoyed now but will reveal its full complexity until around 2039.
The Alliance of Burgundian Finesse and Languedoc Terroir at Domaine Anne Gros & Jean-Paul Tollot
The Estate
Founded in 2006, Domaine Anne Gros & Jean-Paul Tollot is the result of the partnership between two passionate Burgundian winemakers. Located in the hills of Cazelles, this estate in the Languedoc is now run by its owners and founders, Anne Gros and Jean-Paul Tollot. Drawing on their heritage, they apply their northern expertise to a southern vineyard of around 21 hectares. The estate stands out through biodiversity-friendly viticulture and a minimal-intervention approach, giving rise to wines that combine the generosity of the south with remarkable elegance.
The Vineyard
This vintage comes from the Les Carrétals plot, a historic parcel of just over one hectare located within the Minervois Cazelles appellation. Planted in 1909, these very old, century-old vines flourish at around 300 metres of altitude on deep clay-limestone soils. This terroir benefits from a Mediterranean climate tempered by cool northerly winds, ensuring slow ripening of the grapes. The vineyard is managed through sustainable farming practices, without chemical products, with meticulous work such as debudding, leaf thinning and regular ploughing to preserve soil vitality.
Winemaking and Ageing
The grapes for the Les Carrétals 2024 vintage are hand-harvested before undergoing full destemming, in the purest Burgundian tradition. Fermentation takes place using indigenous yeasts in temperature-controlled stainless steel vats, allowing for gentle, precise extraction. Ageing then takes place entirely in oak barrels, with an additional contribution from sandstone vats, to refine the tannic structure while preserving the brightness of the fruit.
