The elegance and richness of a Savagnin from Côtes du Jura aged sous voile

The estate

Founded in 1984 by Jean and Chantal Berthet-Bondet, two agronomy engineers who left city life to revive an abandoned vineyard, the Domaine Berthet-Bondet now covers 15 hectares in Château-Chalon, in the Jura. Since 2018, Hélène Berthet-Bondet has carried on the family legacy by managing the estate. The distinctive feature of Domaine Berthet-Bondet lies in its scientific and methodical approach to Jura viticulture, combining agronomic expertise with respect for local traditions, notably in the production of sous voile wines.

The vineyard

The vines of this Côtes du Jura are planted on gravel and marl soils typical of the Jurassic period. Averaging around 30 years old, they have been farmed under certified organic agriculture since 2013. The estate practices alternate-row cover cropping and works the soil.

Winemaking and ageing

The harvest is carried out by hand. The grapes are pressed as whole bunches before fermentation in stainless-steel tanks. The Savagnin is then aged for a minimum of three years in old 228-liter oak barrels, following the traditional Jura sous voile method under a veil of yeast. The barrels are not topped up, allowing controlled oxidation that gives the wine its distinctive character.
