Tasting
Colour
A pale golden straw hue, bright and almost limpid.
Nose
Intense and complex, the bouquet reveals aromas of citrus, crisp green apple and dried fruits, enhanced by herbaceous notes, mandarin zest and a subtle smoky, saline touch.
Palate
Remarkably balanced, the palate combines lively tension with a finely toasted richness. The whole is carried by a pure minerality and extends into a long, persistent saline finish.
Food and wine pairing
Ideal with seafood such as lobster or oysters, this white wine also pairs beautifully with grilled fish, white poultry or a local cheese such as Comté.
Service and storage
Naturé "Foudre à Canon" 2022 can be enjoyed now, after decanting for one to three hours, served at a temperature of around 13°C. With a great capacity for aging, it can be cellared for several decades.

The pure, mineral expression of a white wine from Domaine de la Borde
The estate
Founded in 2003 by Julien Mareschal, Domaine de la Borde stands out for its natural, authentic approach in the heart of the Jura. Having initially taken over a few hectares at the age of twenty-three, the winemaker now runs a five-hectare vineyard located on the slopes of Pupillin. Deeply attached to his terroir, he cultivates his vines according to the principles of organic and biodynamic farming. Domaine de la Borde is thus renowned for producing wines of great precision, faithfully reflecting the minerality of the Jura.
The vineyard
Located within the Arbois-Pupillin appellation, the vineyard spans steep slopes rising to between 300 and 450 metres in altitude. The vines, some of which are seventy-seven years old, thrive on complex soils made up of grey and blue Liassic marls, as well as "schistes cartons" that promote excellent drainage. The estate favours natural cover crops and manual soil work, with no synthetic products, in order to preserve local biodiversity and the ecosystem.
Winemaking and aging
The grapes are hand-harvested at optimal ripeness. For the Naturé "Foudre à Canon" 2022 cuvée, the berries are 50% destemmed before undergoing a cold static settling process. Fermentation begins spontaneously thanks to indigenous yeasts in large-capacity foudres. The wine is then aged on the lees for twenty to twenty-four months in foudres and amphorae. During this time, it is regularly topped up to prevent excessive oxidation. It is finally bottled without fining or filtration.
