Tasting Notes
Appearance
The colour reveals a brilliant ruby hue, crossed with subtle violet glints, evidencing a beautiful clarity.
Nose
The bouquet proves wonderfully complex, releasing aromas of ripe red and black fruits such as strawberry coulis and blackcurrant jelly. These intertwine with floral notes of violet, touches of sweet spice, as well as deeper nuances of liquorice, camphor and cocoa.
Palate
Fleshy and flavourful, the palate unfolds a dense, sensual texture, supported by tannins of exceptional finesse. A beautiful mineral thread lends tension to the whole, guiding the wine towards a long, refined finish marked by great freshness.
Food and Wine Pairing
This red wine pairs wonderfully with flavourful meats. It will beautifully complement pork chops with thyme, a Camargue-style bull stew, or roasted leg of lamb with garrigue herbs.
Serving and Cellaring
To fully enjoy the Aimer, Rêver, Prier, Se Taire 2025, it is recommended to serve it at a temperature of around 15°C. This wine, suited to ageing, can be enjoyed from 2027 and will continue to evolve favourably until around 2037, with a peak expected between 2028 and 2035.

The Estate
Officially founded in 1998, Domaine du Clos des Fées quickly established itself as an essential reference in Roussillon. At the helm of this estate, Hervé and Claudine Bizeul passionately cultivate a mosaic of terroirs spread across some thirty hectares. Driven by a demanding vision free from passing trends, the estate stands out for its sustainable viticulture and its commitment to producing wines of strong character, reflecting the full richness and diversity of the Mediterranean landscape.
The Vineyard
Classified as IGP Côtes Catalanes, this cuvée comes exclusively from the Cabrils lieu-dit, located in the commune of Tautavel. The vines grow on a steep, arid hillside with a north-facing exposure, ideal for preserving the acidity of the grapes under a Mediterranean climate. The soils consist of red and black clay mixed with frost-shattered limestone, offering a challenging terroir perfectly suited to this northern grape variety.
Winemaking and Ageing
The grapes for the Aimer, Rêver, Prier, Se Taire 2025 are harvested entirely by hand. In the cellar, the process begins with a short cold pre-fermentation maceration to gently extract colour and aromas. Fermentation is triggered by indigenous yeasts, accompanied by gentle punching down and moderate pumping over. Finally, the wine is aged for eight to ten months in Burgundy barrels, followed by light filtration before bottling.
