Vinification and aging

Hand-harvested at perfect ripeness after tasting the berries. Slow and gentle pressing for 3 hours, followed by natural cold settling for 5 days with daily stirring. The alcoholic fermentation extends over 4 weeks, divided between stainless steel tanks for one-third and 600-liter demi-muids for the remaining two-thirds. The total aging of this white Sancerre wine is 12 months, including stirring of the wines in barrels until Christmas, complemented by a minimum bottle aging of 12 months.
