Description
Characteristics and Tasting Tips for Bois des Merveilles 2024 from Domaine Jean-Baptiste Senat
Tasting
Color
Bois des Merveilles 2024 presents a deep, intense red color, reflecting the concentration brought by the old Carignan and Grenache vines that make up this cuvée.
Nose
The nose is complex and expressive, revealing a bouquet of fresh red fruits and black fruits, enhanced by notes of citrus and liquorice that bring freshness and depth to the whole.
Palate
On the palate, this Minervois combines elegance and vibrancy, carried by a confident presence and beautiful purity of fruit, echoing the red fruits, orange and liquorice found on the nose. The tannic structure, refined by the long ageing, is balanced by a vivid freshness, leading to a complex and persistent finish.
Food and Wine Pairing
This wine is ideally suited to rich meats served with fruit, such as duck with red berries, as well as spiced slow-cooked dishes with dried fruits, like a tagine with prunes.
Serving and Cellaring
Bois des Merveilles 2024 is best served at around 18°C. A short decanting allows the richness of its bouquet and the finesse of its structure to fully unfold.
Bois des Merveilles 2024, a Terroir-Driven Minervois from Domaine Jean-Baptiste Senat
The Estate
Domaine Jean-Baptiste Senat was founded in 1996 in Trausse-Minervois, in the Aude, when Jean-Baptiste and Charlotte Senat took over the family lands in the Languedoc. Still run by the couple today, the estate cultivates around 15 hectares of vines according to the principles of organic farming certified by Ecocert. Recognised as a benchmark of the Minervois, it champions indigenous grape varieties and old vines to produce sincere, artisanal wines that express their terroir.
The Vineyard
The vines used for Bois des Merveilles are planted on the foothills of the Montagne Noire, in the garrigue of Trausse, in the heart of the Minervois appellation. The terroir combines siliceous garrigue lenses with clay-limestone soils, providing a pedological setting that favours the depth and finesse of the wine. The vines, traditionally trained as bush vines (gobelet) and organically farmed, include century-old Carignan and sixty-year-old Grenache.
Vinification and Ageing
The making of Bois des Merveilles 2024 begins with whole-bunch harvesting, followed by maceration. The wine is then aged in barrels, a choice that preserves the freshness of the fruit while adding depth and tannic integration. Bottling is carried out at the estate.
