Description
The mineral expression of a white wine from the Jura by Domaine Rolet
The estate
Founded in 1942 by Désiré Rolet with just four hectares, Domaine Rolet has become an essential institution in the Jura. Located near Arbois, the estate now spans 66 hectares, making it the second-largest independent domaine in the region. Since 2018, the estate has been taken over by three passionate families (Flambert, Dupuis and Devillard), with Christophe Flambert at its helm. Committed to environmentally responsible winegrowing, the domaine is now certified organic, perpetuating its heritage while showcasing the authentic expression of its terroirs.
The vineyard
The grapes come from the prestigious L'Etoile appellation, and more specifically from the En Novalet plot located in the commune of Plainoiseau. This unique terroir stands out for its soils composed of grey Liassic marls, covered with limestone scree rich in pentacrines, small star-shaped marine fossils. The vines, averaging around 45 years of age, are cultivated using sustainable and organic methods, promoting soil vitality and aromatic concentration.
The vintage
This year's growing cycle was managed with meticulous attention to phenolic ripeness. This careful attention paid to the vines throughout the season made it possible to achieve a perfect balance between sugar concentration and the natural acidity of the berries at harvest time.
Winemaking and aging
Following hand-picked harvests and rigorous sorting, the grapes for L'Etoile Chardonnay 2023 are pneumatically pressed and then cold-settled. Fermentation takes place under strict temperature control, maintained between 20 and 22°C. The wine is then aged for twelve months in French oak barrels, allowing subtle woody notes to be integrated while preserving the mineral purity of the terroir.

Tasting notes
Color
This white wine reveals a pale golden hue, reflecting its great freshness.
Nose
Particularly expressive, the bouquet opens with a beautiful minerality intertwined with citrus aromas (lemon, lime) and white-fleshed fruit. After a few minutes of aeration, it reveals great complexity, with notes of dried fruit, toasted almonds, white flowers such as hawthorn, along with subtle smoky and toasted touches.
Palate
The attack is lively, carried by precise acidity. The mid-palate surprises with its roundness and richness, offering flavors of white peach, hazelnut and a delicate buttery touch. The remarkably long finish stretches out with an elegant flinty minerality and a fine bitterness.
Food and wine pairing
This wine pairs wonderfully with seafood, oysters or a fish ceviche. It will also enhance white poultry in cream sauce, as well as regional cheeses such as Comté, Morbier or blue Jura cheese.
Service and storage
To fully appreciate this wine, it is recommended to serve it at a temperature between 12 and 14°C, taking care to open it about fifteen minutes before tasting. While it can be enjoyed now for its liveliness, it also has excellent aging potential and can be cellared until around 2033.
