Tasting notes
Appearance
The wine reveals a red colour with deep ruby and garnet reflections, which may develop subtle orange hues on the rim of the glass over time.
Nose
The aromatic bouquet opens with vibrant notes of red fruits, dominated by ripe cherry. It then gains complexity through refreshing herbaceous touches, delicate floral scents of violet and rose petal, as well as subtle spicy nuances.
Palate
Medium-bodied, the palate stands out for its elegance and remarkable freshness. It unveils a precise mineral framework, supported by refined and well-integrated tannins. The finish stretches with remarkable persistence.
Food and wine pairings
This red wine pairs wonderfully with rich and flavourful dishes. It will enhance braised or grilled beef, game meats (deer, wild boar, pheasant) as well as traditional recipes such as mushroom risotto or ossobuco. It also accompanies dishes featuring white truffle and characterful aged cheeses such as Parmesan or Gorgonzola perfectly.
Serving and cellaring
To fully appreciate the Aeroplanservaj 2022, it is recommended to serve it between 18 and 20°C in large rounded glasses. Generous aeration or decanting for 30 to 60 minutes before serving is advisable. Endowed with great ageing potential, this wine deserves to rest in the cellar for many years to fully develop its complexity.
The elegance and minerality of a great wine from the Barolo appellation
The estate
Founded in 1976 in Piedmont, the Domenico Clerico estate has established itself as a major figure of the Barolo appellation. Located in Monforte d'Alba in Italy, the property played a key role in the innovative "Barolo Boys" movement, combining respect for the terroir with modern techniques. Today, Giuliana Clerico, the founder's wife, leads the estate. She is supported by her nephew Orlando, who manages the vineyards and the cellar, as well as by cellar master Gianmatteo Raineri. Together, they perpetuate the philosophy of excellence of this illustrious house.
The vineyard
Coming from the Baudana cru in the commune of Serralunga d'Alba, this Barolo cuvée is sourced from a plot planted in 1994. Reaching an altitude of 340 metres, the vines benefit from a west to south-west exposure. Unlike the estate's other terroirs, the soils here are mainly composed of silt (55.4%) and clay (20.2%), complemented by sand, active limestone and ancient marine fossils. This unique geology gives the wine its mineral and refined profile. The estate practises organic viticulture, favouring soil work to allow the identity of the terroir to express itself.

Winemaking and ageing
The estate's philosophy is based on minimal intervention to reflect the purity of the fruit. For the Aeroplanservaj 2022, the process begins with a long skin maceration lasting twenty-four months in order to extract all the aromatic and structural complexity. The wine is then aged for two years in oak barrels, made up of 30% new wood and 70% used barrels. Finally, it rests for a minimum of two additional years in bottle before being released.
