The Estate

The Fabien Jouves - Mas del Perié estate, which he took over in 2006, is perched on the highest slopes of Cahors. Having immediately converted the vineyard to organic and then biodynamic farming, this passionate winegrower has devoted himself to crafting natural wines, free from sulphur and artifice, that respect the identity of their terroirs.

An exceptional winemaker from an old farming family of the Causse, he is today the leading figure among the "natural" winemakers of his appellation.  Fabien Jouves has paved the way for excellence in Cahors and continues to innovate and experiment with each new vintage, offering a highly diverse range of South-West wines.

The Vineyard

Rays 2017 is a Cahors wine from the “Combel de Rayssou” plot (B763), named after the Occitan word for “stream”. The 50-year-old vines are planted in siderolithic ferruginous limestone soil at the top of the slopes, at an altitude of 350 metres.

Winemaking and Ageing

After manual harvesting, the grapes are destemmed and then vinified naturally in the cellar, without any oenological additives. 30-day maceration. Fermentation and ageing in egg-shaped vats for 18 months.
