Tasting
Colour
Bright and luminous, this white wine reveals a straw-yellow hue, subtly streaked with delicate green highlights.
Nose
The aromatic bouquet opens with great freshness, unveiling scents of fresh grapes, green apple and white peach, underscored by tangy citrus notes of lemon and lime. Subtle floral touches of acacia intertwine with a mineral imprint reminiscent of gunflint.
Palate
The palate offers an elegant, sleek texture, carried by a thirst-quenching acidity and a vibrant tension. The balance is harmonious between striking liveliness and a touch of sweetness, all enhanced by a saline minerality evoking chalk and wet stone.
Food and wine pairing
This wine pairs beautifully with a seafood platter, raw oysters or a ceviche. It also shines alongside delicate white fish, white meats or poultry in creamy sauce, as well as cow's milk cheeses or a mature goat cheese. It proves equally perfect as an aperitif or with spring rolls.

The estate
Founded in 1880 in Beaune, Maison Joseph Drouhin is a historic figure of Burgundy. Now led by the fourth generation, represented by Frédéric, Philippe, Laurent and Véronique Drouhin, the estate spans around a hundred hectares. A pioneer of sustainable viticulture, the estate adopted organic and biodynamic practices early on, officially certified since 2009. The family's philosophy is rooted in the authentic expression of terroir and minimal-intervention winemaking, ensuring wines of great purity.
The vineyard
The grapes used for this wine come mainly from the terroirs of the Hautes Côtes de Beaune, the Hautes Côtes de Nuits and the Côte Chalonnaise. The vines are planted on hillsides with clay-limestone soils, an ideal environment for this grape variety to thrive. The vineyard is cultivated with meticulous care, favouring natural methods, horse-drawn ploughing for certain plots, and manual harvesting to preserve the quality of the berries.
The vintage
The year 2024 began with a mild winter, leading to early budbreak as early as March. The growing cycle was marked by strong mildew pressure, requiring constant vigilance. Flowering in June suffered from coulure and shatter, reducing yields but favouring a fine concentration of fruit. A hot, dry and sunny August then allowed optimal ripeness to be reached before harvesting began in mid-September under clement skies.
Winemaking and aging
After an extremely rigorous sorting process, both in the vineyard and at the winery, to retain only the healthiest fruit, the grapes are gently pressed using a pneumatic press. The must is then clarified before being transferred into vats, whose size was specifically adapted to the year's low volumes. Alcoholic fermentation and aging take place over a period of six to ten months.
