The estate
Matthias Planchon represents the new generation of Sancerre winemakers. After honing his skills with Alphonse Mellot, he set up in 2017 and developed a 5-hectare estate with deliberately controlled dimensions. Certified Demeter and Biodyvin, his biodynamic vineyard highlights flint and limestone terroirs to produce mainly Sauvignon Blanc whites. His Les Herses and Le Paradis cuvées are characterized by extended aging periods that magnify the expression of the terroir. His modern approach places him among the emerging talents of the appellation.
The vineyard
"Les Chambrates" is a Sancerre wine stemming from a 0.12-hectare plot resting on a clay-limestone terroir managed organically and biodynamically.
Winemaking and aging
Manual harvest. Sequential pneumatic pressing before static settling at less than 10°C for approximately 48 to 72 hours. Fermentation takes place in 300-liter "cigar" barrels. The wine is then aged for one year on fine lees, then racked for an additional year of aging in bulk in stainless steel vats. Bottling is carried out at the estate according to the lunar cycle.
