Appearance
The wine shows a ruby hue of moderate intensity, adorned with subtle highlights.
Nose
Bright and deep, the nose releases an expressive bouquet of ripe red fruits, dominated by aromas of cherry and raspberry.
Palate
On the palate, the attack is straight and reveals a fully ripe, fruity texture. The structure is tight and vertical, leading to a finish of beautiful freshness, underscored by particularly taut fruit.
Food and wine pairings
This red wine pairs ideally with delicate white meats such as roast fattened chicken with root vegetables, coq au vin blanc or pork tenderloin. It is also a wonderful match for fine charcuterie, vegetarian dishes made with mushrooms, and premium fish.
Serving and cellaring
To fully enjoy this wine, we recommend serving it at a temperature between 14 and 16°C. Decanting it for thirty to sixty minutes before tasting is advised to allow it to open up fully.
The Elegance and Tension of a Great Red Wine from Alsace
The estate
Founded in 1780, the family estate spans ten hectares divided into some forty plots in the heart of Alsace. Today, Mélanie Pfister, representing the eighth generation, runs the estate alongside her father André. A pioneer in abandoning herbicides as early as the 1980s, the estate has been certified organic since 2021 and incorporates biodynamic preparations. Mélanie Pfister stands out for her rigorous plot-by-plot approach and her determination to produce precise, elegant wines with a profound sense of identity.
The vineyard
Located in the Bas-Rhin, in the north of Alsace, the Dahlenheim vineyard enjoys a cool climate. The Rahn lieu-dit lies on the eastern slope of the Scharrachberg hill, benefiting from soft morning light. The vines thrive in poor terroir, made up of a limestone base covered with loess. This configuration, combined with a gentle slope, limits vine vigor and promotes slow, even ripening of the berries. The entire vineyard is harvested by hand.
Winemaking and ageing
To craft this wine, the vinification relies on a maceration with punching down and pumping over to gently extract the material. After malolactic fermentation, the wine benefits from a meticulous ageing process. It rests for fifteen months in Burgundy oak barrels that have held several previous wines, a method that refines the tannic framework while preserving the brightness of the fruit.
