Nose
A gourmand and refined profile revealing notes of buttery caramel, vanilla and manuka honey imparted by the bourbon casks. It then develops complex aromas blending citrus and smoke, reminiscent of the local soy sauce, accompanied by vanilla highlights.

A rich palate expressing a honeyed and chocolaty sweetness, enhanced by white pepper spices and a fruity freshness of candied lemon. The whole reveals a remarkable complexity, both sweet and fresh, with a structure provided by iodine-rich peat that imparts length and persistence.

The Refinement and Vivacity of a Japanese Single Malt from Hokkaido

The Akkeshi Distillery, Exemplifying Modern Japanese Whisky Excellence

Founded in 2016 by Keiichi Toita, president of Kenten Co. Ltd, the Akkeshi distillery represents the excellence of modern Japanese whisky. As the second distillery built on Hokkaido island in northern Japan, it benefits from a unique coastal environment with peat marshes reminiscent of Scotland. Using Forsyth stills and the pure water of the Homakai River, it produces single malts aged in bourbon, sherry and Japanese mizunara oak casks. Its three warehouses, one of which is located on the bay, allow a maturation influenced by sea mists, creating whiskies with a distinctive character that combines Scottish traditions with Japanese terroir.

Seimei, the Seventh Edition of the Solar Term Series

Seimei is the seventh expression in the prestigious Solar Term series, a limited collection of 24 editions named after the Asian solar seasons. Its name means "clear and bright", evoking the period when nature is reborn after winter. Distilled from malted barley from Hokkaido and water filtered through the peat of the Homakai River, this single malt stands out for its label depicting the flight of swallows that, after spending the winter on the warm islands of Southeast Asia, cross the sea to Japan. The influence of the sea mists gives this heavily peated Japanese whisky its unique character, combining gourmand sweetness with smoky complexity.
