Tasting

Color
A sumptuous color ranging from deep golden amber to reddish brown, testament to its long maturation. The spirit reveals a light unctuousness, forming delicate yet persistent legs on the sides of the glass.

Nose
The first impression reveals gentle waves of deep cocoa, toasted almond biscuits and rich honey. After a few minutes of aeration, the sherry influence awakens with notes of dried figs, black tea, cherry liqueur and polished leather, subtly wrapped in a delicate saline breeze and a very discreet hint of smoke in the background. Adding a few drops of water releases aromas of demerara sugar, nutmeg and saffron.

Palate
The attack is a true explosion of sherry influence: raisins, dried apricots, velvety caramel and warm bread intermingle. The texture turns voluptuous, generous and slightly waxy. The palate then evolves towards warming spices, revealing candied ginger, white pepper, clove and nutmeg, underpinned by deep notes of old wooden furniture. The medium-length finish lingers on a comforting spicy warmth, chocolatey touches and a persistent tingling sensation.

This celebratory spirit calls for a patient and thoughtful tasting. Take the time to let it breathe and nose it regularly to fully grasp its evolution. It pairs beautifully with aged semi-hard cheeses such as Comté or Manchego, as well as mild blue cheeses like Gorgonzola Dolce.
