Tasting

Nose
Intensely complex with dominant notes of peat and delicate smoke wrapping around pronounced citrusy and herbal aromas. With aeration, the profile further develops with assertive spices such as black pepper and clove, mustard seeds, and cereal notes that underline the medicinal, malty character. Secondary herbal aromas include mint and dandelion.

Palate
Broad and silky, the flavor profile reveals a remarkable balance between peat, oily, malty and chocolatey notes, with a fruity dimension evoking pear and mirabelle plum. Floral flavors of jasmine and broom as well as honeyed notes complete this complex palette. The finish is long and fresh with a gradual evolution of herbal aromas of green barley, oregano, and sage bringing great vitality. The peat becomes progressively more delicate and ethereal. Flavors of smoked black tea unfold elegantly on the palate with fine tannins.

Founded in 2008 by Ichiro Akuto, Chichibu represents the excellence of contemporary Japanese whisky. Located near the Arakawa River in Saitama Prefecture, north of Tokyo, this distillery stands out for its artisanal approach and traditional methods. Ichiro Akuto, current owner and emblematic figure of the Japanese industry, uses small stills and mizunara oak fermentation vats, a rare Japanese wood. The distillery works with carefully selected barley and first-fill bourbon casks. Chichibu has established itself through its ability to produce peated single malts of remarkable complexity, combining aromatic power and finesse of execution, thus embodying the qualitative renaissance of Japanese whisky.

The 7 Year Old Single Cask #8282 Bourbon Barrel 1st Fill Heavily Peated Itinéraires Collection 2017 embodies the excellence of Chichibu’s artisanal production. Distilled in 2017 from the Odyssey barley variety, this Japanese whisky benefited from 7 years of aging in a unique first-fill bourbon cask, number #8282. The peat used reaches a remarkable intensity of 50 ppm, conferring a powerful, complex smoky character to this single malt.

Bottled at cask strength at 65.4% ABV, this whisky preserves all the spirit’s authenticity and aromatic richness with no chill filtration and no added coloring. The ultra-limited production of only 176 bottles makes this expression a collectible sought after by lovers of peated Japanese whiskies. This edition is part of the Itinéraires collection, reflecting the distillery’s commitment to exploring the many facets of artisanal Japanese whisky.
