Tasting tips for the Paris Foundations 2025 Edition Montmartre by Chichibu
Tasting
Nose
Opulent and velvety, the bouquet highlights exotic fruits (passion fruit, lychee, mango), accented by red fruits (grape, blackberry). Notes of forest floor (dead leaves, porcini) and a touch of prune add depth. Spicy accents (cinnamon), a slight malty bitterness, as well as floral (white flowers) and woody hints enrich the whole, carried by a fine peaty smoke.
Palate
A full-bodied, generously peated opening, lively and tangy, with a peppery edge. The profile develops into honeyed and waxy nuances, gaining roundness. Toasted bread, rusks, malty accents (barley porridge) and delicious fruit (mirabelle plum, damson) give structure to the palate. Vanilla, cocoa and delicate smoke complete the ensemble. The long finish brings malt back to the forefront, enlivened by gentian, mint, eucalyptus and sage. The character remains both tropical (passion fruit) and candied (plum), gradually wrapped in buttery caramel and Bourbon vanilla.
The structure and richness of an exceptional Japanese single malt
Chichibu, the excellence of Japanese craft whisky
Founded in 2008 by Ichiro Akuto in Saitama Prefecture, the Chichibu distillery embodies the excellence of Japanese craft whisky. Owned by Venture Whisky Ltd. and run by its founder, it stands out for its human-scale production and its innovative approach to cask finishes. Nestled at the foot of the Okuchichibu Mountains, Chichibu benefits from an exceptional terroir and pure water from Mount Kobushi. The distillery has made a name for itself with highly sought-after limited editions.
The Paris Foundations 2025 Edition: a tribute to the City of Light
Since 2018, Chichibu has been creating a cuvée dedicated to the French capital. This Paris 2025 Edition celebrates the privileged bond between Paris and Tokyo by drawing parallels between their respective neighborhoods. This demanding blend brings together whiskies of different ages (5 to 14 years) from multiple casks: four new French oak casks, one Spanish oak sherry cask, three French oak casks previously containing red Bordeaux wine, one American oak hogshead, six Bourbon barrels, and two Bourbon barrels that had held heavily peated whisky. This diversity of casks gives the whisky exceptional aromatic depth.
Presented in a case, this 70-cl single malt embodies the pop, luminous visual identity of the Paris Edition series, inspired by Japanese kawaii aesthetics and postage stamps, with six different labels celebrating the cultural bridges between the two metropolises.
