Description
Characteristics and Tasting Tips for Shibboleth Exceptional Cask Selection Mark XVI by Foursquare
Tasting
Appearance
Shibboleth Mark XVI reveals a deep amber colour verging on copper, the result of sixteen years of maturation in a tropical climate in ex-bourbon American oak casks. The golden highlights and the viscosity visible as the glass is swirled bear witness to an intense aromatic concentration, achieved without any added colouring. As it is not chill-filtered, this rum may show a slight haze or opalescence, a sign that its natural integrity has been respected rather than a flaw.
Nose
The nose is concentrated and structured, dominated by notes of vanilla, toasted coconut and caramel, inherited from the long contact with American oak. Dried and candied fruits follow, such as dried banana, orange zest, raisins and apricots, then a palette of refined dry spices: nutmeg, white pepper and allspice. Darker touches of leather, tobacco, cocoa and black tea complete this dense, serious bouquet, typical of an old Barbadian rum with a long maturation.
Palate
The attack is dry and powerful, carried by an almost tannic structure in which toffee, toasted oak and creamy vanilla interweave with notes of ripe mango, caramel and golden syrup, tinged with a hint of sweet aniseed. The 56% ABV is well integrated, delivering a sense of power without aggression. The finish, long and very dry, extends the tones of oak, spice, cocoa and leather, accompanied by a controlled, lingering peppery warmth.
Pairings and Tasting Occasions
Shibboleth Mark XVI is ideally enjoyed neat, in a tulip glass or a copita, at room temperature, taking the time to observe its evolution; a few drops of water can, if desired, open up the bouquet further. As for pairings, its notes of caramel, vanilla and cocoa complement chocolate desserts or a crème brûlée, while its dryness and tannic structure strike a dialogue with blue-veined or washed-rind cheeses, as well as with an aged Cheddar or a matured Comté. It can also accompany roast meats with spicy or lightly chocolate-based sauces.
Mixology
Given its complexity and its character as an exceptional rum, Shibboleth Mark XVI is above all designed for neat sipping, which alone allows all its nuances to be appreciated. However, in small quantities, it can lend its woody structure to a spirit-forward cocktail such as an Old Fashioned or a rum Manhattan, alongside a younger, more accessible rum.
An exceptional Barbadian rum, dry and woody, aged entirely in a tropical climate in Saint Philip, Barbados
Foursquare, the emblematic family-owned distillery of Barbadian rum
Founded in 1996 by Sir David Seale on the site of an 18th-century sugar plantation in Saint Philip, Foursquare is now run by Richard Seale, the fourth generation of the family, a master distiller and master blender renowned for his technical expertise and his commitment to the authenticity of Barbados Rum. The distillery combines double retort copper pot stills with a vacuum Coffey column, and practises fully tropical ageing, with no added sugar, colouring or flavouring. Foursquare has established itself as one of the world's benchmarks for rum thanks to its transparency, its expertise and its active defence of a strict Barbadian geographical indication, requiring fermentation, distillation, maturation and bottling to take place on the island.
Shibboleth Exceptional Cask Selection Mark XVI, a single blended rum that embodies Barbadian authenticity
Shibboleth Exceptional Cask Selection Mark XVI is a Single Blended Rum created by blending, before casking, distillates from the double retort copper pot still and the vacuum Coffey column, both operated at Foursquare Rum Distillery. Bottled in March 2021 at 56% ABV, this rum has aged for sixteen full years in the Barbadian tropical climate, exclusively in ex-bourbon American oak casks, with no wine cask finish whatsoever.
Designed from the outset to withstand a long maturation, Shibboleth stands as a concrete demonstration that very old tropical rums are not necessarily over-oaked or tired. Its meaningful name, and the purple colour of its label, pay tribute to Nobiliary, a previous non-vintage cuvée in the Exceptional Cask Selection series, thus creating a narrative lineage within the range. This non-chill-filtered Barbados rum, free of any additive, illustrates the philosophy of integrity and truth championed by Foursquare, and is one of the most accomplished expressions in the Exceptional Cask Selection series.
