Description
Characteristics and tasting tips for Breath of Fresh Air 37 Years Old by House of Hazelwood
Tasting
Appearance
A luminous, pale amber hue, recalling the golden tones of a sunrise. In the glass, fine, slightly viscous legs bear witness to its long and patient ageing.
Nose
Wonderfully fresh and invigorating. It opens with herbaceous notes of spearmint, crushed mint and sorrel leaves. This springtime freshness is softened by delicate pineapple and strawberry fruit, wrapped in creamy honey and an indulgent touch of buttered mint sweets.
Palate
The light to medium-bodied texture reveals an alluring buttery smoothness. The palate delivers on the promise of the nose with a clean, minty structure, supported by vibrant fruit, rum-like esters, heather and honey. It then moves towards flavours of butter shortbread before revealing a medium-length finish that is delicately dry and deeply refreshing.
Pairings and serving occasions
Ideal for opening the festivities, it is especially recommended by the house for welcoming guests at a Burns Night celebration. Its invigorating profile and moderate dryness make it an excellent aperitif. It will elegantly accompany light dishes such as delicate smoked fish, fine charcuterie or mild hard cheeses. Best enjoyed in the late afternoon or on a mild spring evening.
Mixology
As an exceptional 37-year-old spirit, this whisky is best enjoyed neat, slowly and contemplatively. A single drop of water may be added to open up its aromatic bouquet.
A Scotch blended grain of remarkable freshness by House of Hazelwood
House of Hazelwood: the hidden treasure of Scotch Whisky
Officially launched in 2022, House of Hazelwood is a unique venture in the world of Scotch Whisky. Operating as an independent bottler, this prestigious brand is closely linked to the history of William Grant & Sons, its current owner, run by descendants of the Gordon-Grant family. House of Hazelwood was created to share with the public the family's private stocks of ultra-aged whiskies, patiently set aside for nearly a century for special occasions. Firmly rooted in Speyside, around the family residence Hazelwood House in Dufftown, the brand draws on a network of traditional warehouses across Scotland. Under the marketing leadership of Jonathan Gibson, it stands out for its curatorial approach, offering rare blends and experimental maturations that chart the fascinating evolution of Scotch over the decades.
The distinctive making of Breath of Fresh Air 37 Years Old
Breath of Fresh Air 37 Years Old is a true manifesto of what an old blended grain can offer when treated as a one-of-a-kind creation. This Whisky belongs to the brand's prestigious "Autumn Collection". It is the result of a meticulous blend of grain whiskies selected from across Scotland, although the parent house is rooted in the heart of Speyside.
Unlike the classic image of very old grain whiskies, often dominated by heavy caramel notes, this release embraces a deliberately fresh and herbaceous aromatic profile. To achieve this, the spirit rested for 37 long years in American white oak casks. This choice of wood allows for a slow maturation that preserves the light character of the grain while developing remarkable complexity.
A true collector's piece, this blended grain is bottled at 46.4% ABV in a classic 700 ml format. Released at a price of around £1,450, it is aimed at collectors eager to explore an unusual and invigorating facet of ultra-aged spirits.
