Tasting
Nose
On the nose, a delicate ashy peat with medicinal accents opens to notes of spiced honey, mulled wine, cocoa and a fresh hint of mint, inherited from ex-sherry cask maturation.
Palate
On the palate, the silky texture initially reveals herbal notes (parsley, eucalyptus, mint), before evolving towards flavors of rice cake spiced with cinnamon, apple tart and milk chocolate. The warm, indulgent finish blends spiced honey, the sweetness of candied corn and a subtle return of peat on ash and soot.
Pairings and Tasting Occasions
This exceptional Japanese whisky is ideally enjoyed neat at room temperature to fully appreciate its aromatic complexity. A few drops of water can reveal additional nuances.

The Kanosuke Distillery, the Japanese Art of Whisky in Kagoshima
Founded in 2018 by Komasa Jyozo, a shochu producer since 1883 in Kagoshima, the artisanal Kanosuke Distillery stands out for its use of three traditional stills with varied shapes and angles, offering a broad range of aromatic profiles. Combining this inherited know-how with modern equipment, it quickly gained international recognition, garnering several awards at the World Whiskies Awards from 2019 to 2022.
The 2023 Limited Edition, an exceptional Blend
This 2023 Limited Edition single malt is made from 100% malted barley. Double distillation is carried out in the three copper Miyake stills of the distillery, each imparting its particular signature to the final spirit.
The maturation takes place in a unique combination of casks: ex-bourbon, American oak casks that held the rice shochu "Mellowed Kozuru", and sherry casks. This use of shochu-seasoned casks is Kanosuke's particular signature, creating a distinctive aromatic profile. The peated malt used was distilled in 2018 and 2019, benefiting from an average aging period of 4 to 5 years. This limited edition bears witness to the distillery's exceptional know-how and its ability to create Japanese whiskies of great complexity.
