Description
Tasting Notes and Characteristics of the PXXO by Planteray
Tasting
Appearance
An attractive, deep and brilliant bronze, the hue reflects its long maturation in wood.
Nose
Intensely Caribbean, the bouquet opens with floral and fruity notes, accompanied by coconut and vanilla. It then evolves towards an indulgent, pastry-like register of cocoa, milk chocolate and honey, enriched with hints of gingerbread, mango, banana and a subtle touch of tobacco.
Palate
Rich and velvety, it unfolds a complex aromatic architecture. Elegant woody notes blend with mango, coconut, chocolate and pastry cream. These are followed by aromas of coffee, grape and a hint of lemon, before giving way to plum, almond, cherry, ginger and delicate briny notes. The finish is long, spicy and persistent, dominated by butterscotch, dates and figs.
Food pairings and tasting moments
This exceptional rum is ideally enjoyed neat, or with an ice cube to release all its nuances, served at a temperature of 18 to 20 °C in a tulip glass. At the end of a meal, it pairs beautifully with chocolate desserts (mousse, fondant), dried fruit pastries (date cake, gingerbread), or even blue-veined cheeses such as Roquefort and very mature hard pressed cheeses.
Mixology
Although designed for neat tasting, this spirit also shines in high-end mixology. The brand recommends the PXXO Old Fashioned: 50 ml of PXXO rum, 5 ml of cane sugar syrup (Demerara), 2 dashes of Angostura bitters and 2 dashes of orange bitters, to be sipped slowly over ice.
Other characteristics
This traditional molasses rum is unpeated. It is bottled at 40% ABV for a volume of 0.7 L and comes in an elegant gift box.
A Barbados Rum of Great Elegance by Planteray
Maison Ferrand and the Planteray heritage
Founded in the early 2000s by Alexandre Gabriel, current owner and master blender of Maison Ferrand, the Plantation brand has recently evolved to become Planteray. Based at Château de Bonbonnet in Charente, this independent French company has established itself as a major player in premium spirits. Its expertise rests on a unique philosophy: double ageing. The spirits benefit from an initial maturation in a tropical climate, notably at the West Indies Rum Distillery in Barbados, owned by the group, before continental refinement in ex-Ferrand casks. This alliance between historic Charente expertise and the richness of Caribbean terroirs makes it possible to create a Barbados Rum of exceptional quality. Planteray thus embodies respect for local traditions while constantly innovating in the complex art of blending.
PXXO 20th Anniversary: the pinnacle of maturation
The PXXO cuvée was specially created to celebrate Alexandre Gabriel's twentieth year as master blender, thereby revisiting the iconic XO 20th Anniversary. This exceptional amber rum is a meticulous blend of traditional molasses rums distilled in Barbados, at the West Indies Rum Distillery, using both column and pot stills.
Although it is a non-vintage rum, it is made from very mature lots, aged between 12 and 20 years. Its production is distinguished by a particularly complex triple maturation process. After an initial tropical ageing in bourbon casks in Barbados, the rum travels to Charente for a second continental maturation in ex-Ferrand oak casks. Finally, it benefits from a final refinement in Pedro Ximenez sherry casks, a legacy of renowned Andalusian houses.
This unique journey, orchestrated by the cellar master of Maison Ferrand, gives PXXO remarkable depth and indulgence. Presented in an elegant gift box, this Barbados rum masterfully illustrates the art of blending and the mastery of multiple ageings, offering an unforgettable experience.
