Description
Characteristics and tasting tips for The Whiskymaker's Edition Kairos by The Lakes
Tasting
Nose
Aromas of spiced raisins steeped in sherry, joined by fragrant sandalwood and a delicate hint of cocoa powder.
Palate
Notes of dried apple slices meet a gentle molasses sweetness, polished oak and soft spices.
Pairings and serving occasions
This single malt is best enjoyed neat, or with a few drops of water, in a tulip or copita glass at 18 to 20°C. It is perfect at the end of a meal or during a moment of quiet contemplation. It pairs beautifully with desserts featuring dried fruit, chocolate and spices, caramelised apple tarts, as well as mild blue cheeses and aged hard cheeses.
Mixology
Although this is an exceptional spirit best savoured unadorned, it can be used sparingly in minimalist cocktails that respect its structure, such as a lightly sweetened Old Fashioned or a variation on the Manhattan, so as not to mask its great aromatic complexity.
A Mediterranean-inspired whisky by The Lakes
The Lakes Distillery: the excellence of English whisky
Founded in 2011 by Nigel Mills and Paul Currie, The Lakes Distillery has established itself as a major player in the revival of English spirits. Located in the picturesque Lake District, in Cumbria, the distillery has transformed a former Victorian farm into a state-of-the-art production site. Setting itself apart from traditional Scotch whisky, The Lakes asserts its own identity, built on a highly precise maturation philosophy and exceptional mastery of sherry casks. Recently acquired in 2024 by the Nyetimber Wines and Spirits group, the distillery is now led by its current owner, Eric Heerema. With renowned creators at the helm of production, it aims to become a global benchmark in luxury, combining natural terroir, technical precision and artistic aesthetics.
The art of maturation: The Whiskymaker's Edition Kairos
The Whiskymaker's Edition Kairos is a highly complex English whisky from a series of limited editions celebrating the creative freedom of the master distiller. The name "Kairos" draws its inspiration from ancient Greece, symbolising an opportune and precious moment, frozen in time.
Crafted from 100% British barley, this spirit undergoes a long 96-hour fermentation before being slowly distilled at low temperature in copper stills. This meticulous method yields a bright, fruity spirit capable of withstanding intense maturation.
At the heart of its identity lies its dynamic ageing. The spirit matures in a rigorous selection of American and Spanish oak casks that previously held oloroso sherry, Pedro Ximénez and red wine. This approach shapes a rich, bold aromatic profile, bottled at 46.6%. A true showcase of the distillery's expertise, this edition captures the essence of a Mediterranean summer breeze while remaining true to the house's technical signature.
