Tasting

Appearance
The appearance displays a deep ruby red hue.

Nose
Generous and inviting, the nose reveals fruity and sweet aromas of red cherries and ripe plums. Floral notes of fresh roses and hibiscus intertwine with delicate hints of fully ripe Roma tomato.

Palate
The palate proves rich while maintaining remarkable balance, both fresh and flavorful. The elegant structure demonstrates meticulous study of contrasts and harmony. The very long finish expresses ripe tannins with persistent smoothness.

Food and wine pairings
This Barolo Aleste Sibi et Paucis 2015 magnificently accompanies braised red meats, feathered game, dishes featuring white Alba truffles, as well as aged cheeses from Piedmont.

The estate
Founded in 1978 when Luciano Sandrone vinified his first vintage in the family garage, this Piedmont estate now embodies Barolo excellence. Established in Barolo with vineyards on the prestigious crus of Cannubi Boschis and Roero, it produces approximately 8,000 cases annually. Since Luciano's passing in 2023, his daughter Barbara Sandrone and son Luca carry on his legacy. The estate distinguishes itself through its uncertified organic approach, limited yields, and winemaking that balances tradition and modernity: spontaneous fermentations, aging in 500-liter barrels with minimal new oak, creating elegant Barolo wines with aging potential.

The vineyard
This Barolo comes from the southeastern part of the Cannubi hill, historically called Cannubi Boschis, located in the commune of Barolo. The vines thrive on a southeast exposure, in moderately compact marl soils. This parcel is situated in the very heart of the Cannubi hill, one of the most prestigious terroirs of the appellation.

The vintage
The year 2015 in Piedmont was marked by seven weeks of intense heat from late June to August 14. Storms then ushered in a long cool ripening period of twelve weeks. These conditions yielded generous aromas and flavors accompanied by beautiful structure, well-ripened tannins, and strong aging potential. Harvest took place from October 6 to 17, 2015.

Winemaking and aging
Spontaneous fermentation occurs with indigenous yeasts in open-top steel tanks. Malolactic fermentation takes place in 500-liter French barrels, which also serve as aging vessels. This Aleste Sibi et Paucis 2015 cuvée benefited from an additional six years of aging in Luciano's personal cellar after the initial release date of September 2019. The bottles bear a special seal identifying this particular library storage program under optimal conditions.
