Tasting

Color
The color reveals a delicate pale yellow hue, enhanced by subtle green highlights.

Nose
The nose opens with fresh white fruit aromas such as apple and pear, harmoniously blended with citrus notes evoking lemon and lime. It also reveals fine floral touches of hawthorn and acacia, underscored by herbaceous nuances reminiscent of garrigue scrubland.

Palate
Medium-bodied, the palate offers beautiful tension thanks to a lively, refreshing acidity. The finish stretches with precision over a mineral backbone accompanied by a slight saline edge.

Food and wine pairing

This white wine pairs perfectly with seafood (oysters, clams, scallops), grilled white fish, or ceviche. It also complements Mediterranean cuisine, summer salads, asparagus, fresh goat cheese, or light poultry beautifully. It can equally be enjoyed on its own, as an aperitif.

Service and storage

For an optimal tasting experience, the Gassier Blanc 2025 should be served at a temperature between 8 and 12°C. This wine is best enjoyed in its youth for its freshness and can be kept until around 2029.

The pure, mineral expression of a white wine from Provence

The estate

Located at the foot of Mont Sainte-Victoire in Provence, Maison Gassier was established in its current form in 1982 by Antoni Gassier, although the family's winemaking heritage dates back to the fifteenth century. This 40-hectare estate has been owned by the AdVini group since 2004. It is managed by Olivier Souvelain, alongside Georges Gassier who oversees the vineyards and winemaker Léa Rouyet. Certified organic, the estate stands out for its deep commitment to regenerative viticulture, preserving the biodiversity and authenticity of its terroir.

The vineyard

This wine from the Côtes de Provence appellation comes from a 40-hectare vineyard planted on clay-limestone soils rich in iron and dotted with pebbles from the Durance river. Sheltered from mistral gusts by Mont Sainte-Victoire, the vines grow at an altitude of between 330 and 350 meters. This terroir benefits from a microclimate with continental influences, offering cool nights ideal for preserving the natural acidity of the grapes. The estate limits its yields to 50 hectoliters per hectare to ensure optimal aromatic concentration.

Winemaking and aging

The grapes for the Gassier Blanc 2025 are harvested at night to preserve the freshness of the berries and avoid any risk of oxidation. In the cellar, the estate's philosophy favors minimal intervention. Direct pressing is followed by extended aging on the lees in temperature-controlled tanks, all in an anaerobic environment to protect the delicate aromas and purity of this wine from Provence.
