Appearance
The wine reveals a golden hue, both deep and luminous, enhanced by warm highlights.
Nose
The nose opens with fruity aromas of pear and roasted pineapple, subtly underlined by delicate woody notes.
Palate
On the palate, this wine offers a creamy texture and lovely freshness. Flavours of pear and cooked pineapple blend harmoniously with light touches of vanilla, leading to a finish marked by elegant salinity.
Food and wine pairings
Ideal with wild sea bass cooked at low temperature, this wine also pairs wonderfully with seafood, Asian-inspired dishes scented with ginger or lemongrass, as well as refined poultry or fish in creamy sauces.
Serving and cellaring
To fully appreciate all the nuances of this 2023 vintage, it is recommended to serve it at a temperature of 10°C.
The richness and minerality of a white wine from Sainte Marguerite en Provence
The estate
Established in 1977 by the Fayard family, the estate has become a benchmark in Provence. Located in La Londe-les-Maures, the domaine is now run by the Fayard children in partnership with the Pernod Ricard group. The only Cru Classé in the region to be certified organic and vegan, Sainte Marguerite en Provence cultivates excellence across a vineyard of approximately 450 hectares. This estate stands out for its deep respect for the environment and its pursuit of uncompromising quality.
The vineyard
The grapes used for this confidential cuvée come from the prestigious plots of La Désirade and Maravenne. This terroir within the Côtes de Provence appellation is characterised by soils composed of mica schist, flint shards, clay and limestone. The vineyard benefits from the regulating influence of the Mediterranean Sea and the protective action of the mistral, offering ideal conditions for precision organic viticulture, supported by rigorous massal selection.
The vintage
The 2023 year was marked by a particularly rainy spring, followed by a very sunny summer. These contrasting weather conditions led to accelerated ripening of the berries, narrowing the harvest period to between the end of August and the beginning of September.
Vinification and ageing
Night-time harvesting helps preserve the aromatic freshness of the berries. Production begins with cold skin maceration before pressing. Vinification and ageing then take place over ten months in new French oak barrels with extra-fine grain. The careful blending of two types of barrels brings both power and acidity. Finally, the wine is fined without any animal-derived products and filtered before bottling.
