Description
Characteristics and tasting notes for the Bourgogne Hautes-Côtes de Beaune "Vieilles Vignes" 2025 from Jean Chartron
Tasting
Appearance
The wine displays a pale to light golden-yellow hue, enhanced by subtle greenish glints in its youth, and a lovely clarity.
Nose
The nose opens with aromas of white and green fruit, such as green apple and pear, alongside citrus notes. The whole is enriched by delicate buttery and brioche touches, as well as hints of almond and vanilla from its ageing.
Palate
The attack is broad and generous, offering lovely volume and a certain richness. The palate stands out for its mineral backbone and finely chiselled acidity, which bring great freshness and stretch into a long, lemony, mouth-watering finish, sometimes punctuated by a hint of menthol.
Food and wine pairings
Ideal as an aperitif, this wine pairs beautifully with grilled or raw fish, seafood and shellfish. It is also a perfect match for escargots, white meats in a creamy mushroom sauce, and blue-veined or full-flavoured cheeses.
Serving and cellaring
For optimal enjoyment, serve this Bourgogne Hautes-Côtes de Beaune "Vieilles Vignes" 2025 at a temperature between 12 and 14°C, taking care to decant it about thirty minutes before serving. This wine can be cellared until around 2030 to reveal its full complexity.
The elegance and vibrancy of a great high-altitude white wine
The estate
Founded in 1859 by the cooper Jean-Edouard Dupard, the Jean Chartron estate has historic roots in Puligny-Montrachet, in the heart of Burgundy. Specialising in great white wines, the estate now covers 14.5 hectares. Representing the fifth generation, Jean-Michel Chartron, supported by his sister Anne-Laure, currently runs the estate. True to its heritage while embracing a contemporary approach, the family tends its vines with close attention to the pure expression of terroir and precision in ageing.
The vineyard
This Burgundy wine comes from high-altitude plots west of Beaune, near the village of Nantoux. Around forty years old, these old vines thrive on clay-limestone soils. The altitude allows the grapes to ripen slowly and harmoniously, preserving fine acidity despite increasingly warm summers. The vineyard has been farmed according to organic principles, without certification, since 2004, reflecting the estate's respect for the environment and biodiversity.
Vinification and ageing
After hand harvesting at full ripeness, the grapes are carefully pressed. Fermentation of this Bourgogne Hautes-Côtes de Beaune "Vieilles Vignes" 2025 takes place entirely in oak barrels. The wine is then aged on fine lees for around eight months in one- to five-year-old barrels, which bring complexity and texture without overly marking the wine. Finally, three months of maturation in tank precede bottling, preserving the brightness and purity of the fruit.
