Description

Tasting notes and serving advice for Pas du Moine "350" Rosé 2025 by Gassier

Tasting

Appearance

A remarkably pale, clear, and luminous rosé hue, revealing subtle hints of lychee.

Nose

The bouquet reveals a beautiful aromatic complexity dominated by red fruit aromas, particularly raspberry, which takes center stage. Exotic notes of mango and passion fruit enrich the palette, accompanied by touches of white-fleshed fruits, especially vine peach, lending remarkable elegance to the whole.

Palate

The balance asserts itself with breadth and generosity. The roundness is accompanied by a fine, persistent length marked by flavors of vine peach and redcurrant. A mineral sensation, stemming from the clay-limestone terroir, brings a pleasant tension that sets this Provençal rosé apart.

Food and wine pairings

Pas du Moine "350" Rosé 2025 pairs beautifully with scallop carpaccio, citrus sea bream ceviche, or grilled sea bass. It also complements elegantly a poke bowl made with salmon, shrimp, avocado, and grapefruit. For a sweet touch, it pairs perfectly with roasted pineapple accompanied by a passion fruit emulsion. Served as an aperitif, it reveals its full versatility.

Serving and cellaring

This vintage is best enjoyed at a temperature between 9 and 11°C. It can be cellared for one to two years after harvest, up to around 2027.

A Côtes de Provence Sainte-Victoire rosé with authentic, mineral character

The estate

The Maison Gassier embodies winemaking excellence rooted in Provence since 1982, when Antoni Gassier acquired the estate in Puyloubier. Now led by Georges Gassier, representing the fifth generation, alongside managing director Olivier Souvelain, the estate spans forty hectares at the foot of the Sainte-Victoire mountain. Certified organic since 2016, the estate stands out for its environmental commitment and its artisanal approach, driven by passionate winegrowers. It is part of the Advini group while preserving its family identity and dedication to excellence.

The vineyard

The terroir of Pas du Moine "350" Rosé 2025 is located in Puyloubier, at an altitude of four hundred meters, nestled on the slopes of the Sainte-Victoire mountain. The soil consists of a clay-limestone blend that gives the wine a distinctive mineral structure and a remarkable ability to preserve the grapes’ natural acidity. Naturally protected by three mountain ranges, the vineyard benefits from a specific microclimate where the coolness of nights and mornings, brought by the mistral, helps maintain the natural acidity of the berries. This cuvée is crafted through parcel selection from the finest plots within the Côtes de Provence Sainte-Victoire appellation, officially recognized in 2005.

Winemaking and aging

This rosé wine from Provence is crafted with a philosophy focused on preserving the terroir’s natural freshness. Harvesting takes place exclusively at night, allowing the grapes to be picked at cool temperatures and limiting the risk of oxidation. Direct pressing, deliberately slow and gentle, minimizes contact between skins and juice. The juice is immediately kept at low temperature to retain fresh and delicate aromas. Fermentation takes place in historic concrete vats, enhancing the pure and authentic character of the grapes without any oak influence.

Grape varieties

Syrah, grenache, cinsault, and rolle.
