Appearance
The wine displays a delicate pale yellow hue, enhanced by subtle green highlights.
Nose
The nose opens with aromas of fresh white fruits such as apple and pear, harmoniously intertwined with citrus notes evoking lemon and lime. It also reveals delicate floral hints of hawthorn and acacia, underscored by herbal nuances reminiscent of garrigue vegetation.
Palate
With a medium body, the palate offers lovely tension thanks to lively, refreshing acidity. The finish extends with precision on a mineral framework accompanied by a slight saline touch.
Food and wine pairings
This white wine pairs ideally with seafood (oysters, clams, scallops), grilled white fish, or ceviche. It also complements Mediterranean cuisine, summer salads, asparagus, fresh goat cheese, and light poultry. It can also be enjoyed on its own as an aperitif.

For optimal tasting, Gassier Blanc 2025 should be served between 8 and 12°C. This wine is best enjoyed in its youth for its freshness and can be cellared until around 2029.
The pure and mineral expression of a white wine from Provence
The estate
Located at the foot of the Sainte-Victoire mountain in Provence, Maison Gassier was founded in its current form in 1982 by Antoni Gassier, although the family’s winemaking heritage dates back to the fifteenth century. This 40-hectare estate has been owned by the AdVini group since 2004. It is managed by Olivier Souvelain, alongside Georges Gassier in the vineyard and oenologist Léa Rouyet. Certified organic, the estate stands out for its deep commitment to regenerative viticulture, thus preserving the biodiversity and authenticity of its terroir.
The vineyard
This wine from the Côtes de Provence appellation comes from a 40-hectare vineyard planted on clay-limestone soils rich in iron and scattered with Durance pebbles. Protected from the gusts of the mistral by the Sainte-Victoire mountain, the vines grow at an altitude between 330 and 350 meters. This terroir benefits from a microclimate with continental influences, offering cool nights ideal for preserving the natural acidity of the grapes. The estate limits its yields to 50 hectoliters per hectare in order to ensure optimal aromatic concentration.
Winemaking and aging
The harvest for Gassier Blanc 2025 is carried out at night in order to preserve the freshness of the berries and avoid any risk of oxidation. In the cellar, the estate’s philosophy favors minimal intervention. Direct pressing is followed by extended aging on lees in temperature-controlled tanks, all in an anaerobic environment to protect the delicate aromas and the purity of this wine from Provence.
