Tasting

Appearance
The wine reveals a silky, luminous appearance, enhanced by delicate silvery highlights that reflect its beautiful clarity.

Nose
Intense and expressive, the nose displays lovely aromatic complexity, blending notes of exotic fruits such as mango and passion fruit with hints of white-fleshed fruits reminiscent of vineyard peach. The whole is underscored by an elegant minerality.

Palate
Full and well-balanced, the palate offers a pleasing roundness at its core, lifted by a freshness that reveals aromas of white flowers. The minerality brings a pleasant tension that carries through to a long, persistent finish marked by citrus notes, notably lemon, along with touches of fresh fruit.

Food and wine pairings

This white wine pairs beautifully with sea urchins accompanied by wild asparagus, sushi, or Mediterranean vegetable-based dishes. It also complements fresh goat cheeses perfectly, as well as delicate desserts such as calisson ice cream.

Serving and cellaring

Pas du Moine 350 Blanc 2025 is best enjoyed at a serving temperature between 9 and 12°C. This wine can be enjoyed now or cellared until around 2029.

The authentic expression of a great Provence terroir by Gassier

The estate

The Gassier family’s winemaking history in Provence dates back several generations, but it was in 1982 that the estate adopted its current artisanal approach. Acquired in 2004 by the Jeanjean family through the AdVini group, the Gassier estate is now under the operational direction of Georges Gassier. A pioneer in environmental stewardship, the property stands out for its certifications in organic and regenerative agriculture. The estate has established itself as a benchmark for enthusiasts seeking authentic wines that respect their ecosystem.

The vineyard

Located at the foot of the iconic Sainte-Victoire mountain, the vineyard extends over 40 hectares within the Côtes de Provence appellation. Reaching an altitude of 350 meters, the vines thrive on a mosaic of soils composed mainly of red clay and limestone, with some sandy-clay areas. The entire estate is farmed according to the principles of organic and regenerative agriculture, promoting biodiversity and soil vitality.

Winemaking and aging

To preserve the full freshness of the berries, the harvest for Pas du Moine 350 Blanc 2025 is carried out exclusively at night. The grapes then undergo a slow and gentle direct pressing, followed by cold settling of the juices. Fermentation takes place in historic concrete vats, a technical choice that enhances the purity of the fruit. The wine continues its aging there for two to four months before bottling.
