Tasting
Appearance
A remarkably pale, clear and luminous rosé hue, this wine reveals subtle lychee highlights.
Nose
The bouquet reveals beautiful aromatic complexity dominated by red fruit aromas, with raspberry taking center stage. Exotic notes of mango and passion fruit enrich the palette, accompanied by hints of white-fleshed fruits, particularly vine peach, lending remarkable elegance to the whole.
Palate
The balance is ample and generous. A pleasing roundness is accompanied by a long, persistent finish marked by flavors of vine peach and redcurrant. A mineral sensation, derived from the clay-limestone terroir, brings a pleasant tension that distinguishes this Provençal rosé.
Food and wine pairings
Pas du Moine "350" Rosé 2025 pairs beautifully with scallop carpaccio, sea bream ceviche with citrus, or grilled sea bass. It also complements a poke bowl made with salmon, shrimp, avocado, and grapefruit with elegance. For a sweet touch, it pairs perfectly with roasted pineapple accompanied by a passion fruit emulsion. Serving and cellaring
This vintage is best enjoyed at a temperature between 9 and 11°C. It can be cellared for one to two years after harvest, i.e. until around 2027.

The estate
The Maison Gassier embodies winemaking excellence rooted in Provence since 1982, when Antoni Gassier acquired the property in Puyloubier. Today led by Georges Gassier, representing the fifth generation, alongside CEO Olivier Souvelain, the estate spans forty hectares at the foot of the Sainte-Victoire mountain. Certified organic since 2016, the estate stands out for its environmental commitment and artisanal approach, driven by passionate winegrowers. It is part of the Advini group while retaining its family identity and dedication to excellence.
The vineyard
The terroir of Pas du Moine "350" Rosé 2025 is located in Puyloubier, at an altitude of four hundred meters, set on the slopes of the Sainte-Victoire mountain. The soil is composed of clay-limestone, giving the wine a distinctive mineral structure and a remarkable ability to preserve the grapes’ natural acidity. Naturally protected by three mountain ranges, the vineyard benefits from a specific microclimate where the coolness of nights and mornings, brought by the mistral, helps maintain the natural acidity of the berries. This cuvée is crafted from a parcel selection of the finest plots within the Côtes de Provence Cru Sainte-Victoire appellation, officially recognized in 2005.
Winemaking and aging
This rosé wine from Provence is crafted with a philosophy focused on preserving the natural freshness of the terroir. Harvesting takes place exclusively at night, allowing the grapes to be picked at cool temperatures and limiting the risk of oxidation. Direct pressing, deliberately slow and gentle, minimizes contact between skins and juice. The juice is immediately kept at low temperature to preserve its fresh and delicate aromas. Fermentation takes place in historic concrete vats, enhancing the pure and authentic character of the grape without any oak influence.
