Characteristics and Tasting Tips for the Savigny-Les-Beaune Village "Les Picotins" Domaine du Pavillon 2023 by Albert Bichot
Tasting
Colour
This wine displays a red colour, true to the Pinot Noirs crafted on the terroirs of the Côte de Beaune.
Nose
The nose expresses aromas of ripe red fruit, cherry and raspberry, accompanied by earthy and floral notes characteristic of Pinot Noir grown on this climat of Savigny-lès-Beaune.
Palate
On the palate, the texture unfolds gradually, revealing a structure that asserts itself through the mid-palate, supported by a lovely harmony and a pleasantly long finish.
Food and Wine Pairing
This wine pairs beautifully with rabbit in sauce, roast or braised poultry, as well as guinea fowl, dishes that naturally complement the finesse and aromatic profile of this red from Savigny-lès-Beaune.

The Estate
Dom. du Pavillon (Albert Bichot) traces its origins back to the 18th century and is located south of Pommard, in the Côte de Beaune, in the heart of Burgundy. Part of the family-owned house of Albert Bichot, now run by Albéric Bichot, the domaine boasts the largest single-span cellar in the village, inherited from a former clos of the Ursulines. Certified organic since 2014, it farms several appellations of the Côte de Beaune, including Pommard, Volnay, Meursault, Corton and Savigny-lès-Beaune.
The Vineyard
The cuvée comes from the climat "Les Picotins", a historic lieu-dit of the Savigny-Les-Beaune appellation. The Pinot Noir vines are planted mid-slope, on well-drained clay-limestone soils, in a setting that enjoys a temperate climate thanks to its proximity to the Montagne de Corton and the town of Beaune.
Vinification and Ageing
The Savigny-Les-Beaune Village "Les Picotins" 2023 is crafted from organically grown grapes, as part of the conversion process undertaken by Domaine du Pavillon since the early 2000s. The domaine's Côte de Beaune red wines, including this cuvée, are aged in the great historic cellar in Pommard.
