Decanter

Clean and clear aromatics, full of ripe black fruit with oak touches - bitter black chocolate, smells fully ripe, almost heady with lots of black bramble fruit. Not sunny but intense aromatics for sure. Clean and crystalline, well integrated fine tannins with bright acidity and a really crisp mineral edge that leaves a chalky, flinty aspect on the finish. Fruit is cool and blue toned with crunch and a lovely weight. Still a little tense and compact but this will be nice, albeit on the slightly bigger, more heftier side for the vintage. Has a juicy core which I like but the structure is definitely at the fore right now. Ageing 50% new barrels, 50% one and two wine barrels. A yield of 18hl/ha. 3.50pH.

Fresh, fruity, elegant, forward, and loaded with sweet, ripe, red fruits, licorice, black cherries, mint, plums and salty chocolate in the perfume, and on the palate. The wine is going to need just a year, or two in the bottle. But, it also promises to age for 2 decades. The wine blends 50% Merlot with 50% Cabernet Franc. 14.2% ABV. Drink from 2028-2047. 92-94 Pts

Inky plum in colour, five-spice and olive pit, measured with a slow unroll. Very impressive, this is full of depth with a savoury swirl of oyster shell and slate, 100% limestone here compared to the Pavie soils with their powerful clay in the mix. Jean-Baptiste Pion technical director. 3.5 pH. 18 hl/ha yield.

The bouquet opens with floral notes, revealing nuances of flower stems, peonies, black pepper and then blackcurrant. Smooth on the attack, the wine shows substance and breadth. Its powerful tannins provide a perfect framework, supported by a structuring acidity. Delicate bitters on the finish further enhance not only the freshness but also the length of the finale. A muscular, precise, energetic wine that has clearly laid down its markers. Ageing will allow it to fully come into its own.

What a bouquet—you’d think you were already tasting a great wine, yet this is only the beginning: plums, blackcurrants, hints of chocolate and tobacco, floral notes; the palate is juicy, precise, powerful and remarkably concentrated, with plenty of fruit, velvety tannins, vibrant freshness and a notably long finish, ending with spicy notes over a mix of dark and red berries. A magnificent Arômes de Pavie.

Description

The elegance and depth of a Second Wine from Saint-Émilion

The estate

The estate's winegrowing history dates back to the fourth century, under the impetus of the Romans, making it one of the oldest terroirs in Saint-Émilion, in the Bordeaux region. Acquired in 1998 by Gérard Perse, who carried out a monumental restructuring of the cellars and vineyards, the estate was elevated to the rank of Premier Grand Cru Classé A in 2012. Following the passing of this visionary owner in July 2025, the management of the illustrious Château Pavie is now entrusted to Henrique and Angélique Da Costa. They carry on a philosophy combining excellence, respect for the environment and high-end hospitality.

The vineyard

"Arômes de Pavie" is the Second Wine of this emblematic Saint-Émilion estate, crafted from vines with an average age of around 32 years, planted on the south-east of the Saint-Émilion hill. This 13.5-hectare vineyard is established on the "plateau", whose clay-limestone soil rests on starfish limestone. Particular care is given to the vineyard: pruning, green harvesting and leaf removal are adapted according to the age of the vines.

It was from 2005 onwards that Arômes de Pavie established itself as the second wine label of Château Pavie, taking over from Château Tour Simard.

Winemaking and aging

Manual harvest with selective sorting. Vinification in temperature-controlled wooden vats. Malolactic fermentation is carried out in barrels, as is the aging, conducted in equal parts between 50% new barrels and 50% one-year-old barrels. Alcohol content: 14.25% vol.

Blend

Arômes de Pavie 2025 is the result of a blend in equal parts of Merlot (50%) and Cabernet Franc (50%).
