Tasting Notes

Nose
Displaying remarkable aromatic purity, the bouquet reveals citrus notes such as lemon and grapefruit, intertwined with delicate touches of white flowers like acacia and hawthorn. Aromas of white-fleshed fruit, reminiscent of pear, apple and peach, round out this elegant ensemble.

Palate
The attack is lively, supported by a perfectly balanced acidity. The mid-palate reveals a broad texture that evolves into a vibrant finish, marked by a lovely mineral tension and a hint of salinity.

Food and Wine Pairings

This white wine pairs wonderfully with grilled fish, seafood or shellfish. It also shines alongside poultry served with a creamy sauce, as well as soft-rind cheeses such as brie or matured goat cheeses. It can equally be enjoyed as an aperitif.

Serving and Aging

This 2023 Bourgogne Chardonnay can be enjoyed now for its freshness, but it also has the potential to evolve, allowing it to be cellared until around 2028.

The Elegance and Mineral Purity of a White Burgundy

The Estate

Founded in the late 2000s by the Picard family, the Au Pied du Mont Chauve estate is located at the heart of the Côte de Beaune, in the commune of Chassagne-Montrachet in Burgundy. Now run by Francine Picard, the estate spans 35 hectares of prestigious terroirs. It stands out for its haute-couture approach to winegrowing, placing agroecology and biodynamics at the centre of its philosophy. With the support of technical director Antoine Lepetit de la Bigne, the estate produces wines of great precision, reflecting the elegance of their climats.

The Vineyard

The grapes used for this Bourgogne cuvée come from a rigorous selection of plots situated on limestone and clay-limestone soils. Averaging around forty years of age and trained in simple guyot, the vines are cultivated according to the principles of organic farming and biodynamics. The estate places the utmost importance on protecting the soils and preserving biodiversity, thereby encouraging healthy harvests and an authentic expression of the terroir.

The Vintage

The year was marked by variable yet generally mild weather. These favourable climatic conditions allowed the grapes to reach an optimal level of ripeness while retaining a lovely acidic balance.

Winemaking and Aging

The grapes are harvested exclusively by hand. After careful sorting on a table, the whole clusters undergo a gentle, extended pressing in pneumatic presses. This 2023 Bourgogne Chardonnay is vinified in a traditional manner, with controlled fermentations. Ageing on the lees is carried out with great precision, combining the use of stainless steel tanks with a subtle passage through oak barrels, without systematic stirring of the lees, in order to preserve the fruit's tension and purity.
