Appearance
The bright pale golden-yellow hue stands out for its remarkable brilliance and beautiful clarity.
Nose
The bouquet opens with a lovely floral and mineral intensity. It exudes aromas of citrus fruits (lemon, lime) and white flowers, harmoniously rounded out by notes of orchard fruits such as white peach and green apple, all underpinned by a limestone minerality in the background.
Palate
Structured and linear, the attack is vibrant and refreshing, carried by citrus notes. The mid-palate reveals a rich, refined texture, unveiling flavours of stone fruits and subtle almond hints. The finish is persistent, marked by precise acidity and a particularly thirst-quenching saline minerality.
Food and wine pairing
This white wine pairs wonderfully with white-fleshed fish in sauce (sole meunière, turbot with beurre blanc), grilled shellfish or in a bisque, as well as poultry in cream sauce. It will also enhance soft cheeses such as Brie or Époisses, or a mushroom risotto.
Serving and cellaring
For an optimal tasting of Puligny-Montrachet 1er cru "Les Demoiselles" 2023, it is recommended to serve it at a temperature between 12 and 14°C, after a light decanting of 20 to 30 minutes. Approachable today, this wine can also be cellared and enjoyed until around 2038.

The estate
Founded in 2007 by Francine Picard, who is its current owner and director, the Au Pied du Mont Chauve estate quickly established itself as an essential reference in Burgundy. Spanning approximately 30 hectares of vines certified organic and farmed biodynamically, the property reflects a constant pursuit of excellence and respect for the environment. Under the leadership of its director, the estate produces terroir wines of great precision, mirroring all the richness and diversity of the climats of the prestigious Côte de Beaune.
The vineyard
The Puligny-Montrachet 1er cru "Les Demoiselles" comes from a sub-climat of the famous Caillerets terroir. Ideally exposed to the south-southeast at around 150 metres of altitude, the vines thrive on well-drained soils composed of marl and colluvial deposits of very stony brown limestone. This exceptional terroir provides optimal conditions for growing vines, ensuring a perfect balance between aromatic richness and mineral tension. On this 0.14-hectare plot grow notably very old vines aged 70 years.
The vintage
The year 2023 began with a mild, damp spring, marked by a few frost risks that were swiftly brought under control. Flowering took place at the end of May in good conditions. The summer then brought intense heat in July, creating slight water stress, fortunately relieved by welcome rainfall at the end of June and the end of July. The warm, dry conditions of late August, punctuated by a few showers, allowed for perfect phenolic maturity, with harvesting carried out in early September under the most favourable conditions.
Vinification and ageing
The harvest is done by hand and followed by rigorous sorting. The whole bunches are gently pressed before overnight settling in stainless steel vats. Fermentation takes place naturally in French oak barrels of various capacities. The ageing of Puligny-Montrachet 1er cru "Les Demoiselles" 2023 extends over eighteen months in 350L barrels (50% first-use and 50% second-use or older).
