Tasting

Nose
Initially revealing roasted and cocoa notes, the nose of Dom Pérignon Vintage 2015 gradually opens up to a floral bouquet of linden, jasmine, and peony, unveiling a sublime spicy dimension. A vegetal and fruity freshness then emerges, with aromas of chlorophyll, orange peel, and green papaya.

Palate
On the palate, the champagne first unfolds delicately, then generously. The flesh of fresh peach and nectarine envelops notes of citrus and gentian, before extending into a remarkable finish.

Serving

To fully appreciate Dom Pérignon Vintage 2015, it is recommended to serve it at a temperature between 8 and 10°C.

Pairings

Dom Pérignon Vintage 2015 pairs perfectly with a variety of refined dishes. It complements delicate fish, seafood, poultry, and fine cheeses.

An iconic champagne, delicate and complex

The estate

Named after the famous monk Pierre Pérignon, procurator of the Abbey of Hautvillers in 1668, champagne Dom Pérignon symbolizes a rich heritage and an unwavering pursuit of excellence. This visionary monk is often linked to the discovery of the traditional method, a crucial milestone in the history of champagne. Dom Pérignon's commitment to quality and innovation continues, embodied today by its current Chef de Cave, Vincent Chaperon, who took over in 2019. The house’s philosophy, focused on expressing the vintages, reflects an ambition to create the “best wine in the world,” a goal upheld since Dom Pierre Pérignon’s appointment as cellar master of the Abbey of Hautvillers.

The collection

Dom Pérignon pays tribute to the art of blending its champagnes with a special edition of Vintage 2015. A unique collection of three bottles and gift boxes created with the estate of Jean-Michel Basquiat.

This case consists of six bottles (two sets of three cases), which, once assembled, form a sublime artwork.

The vintage

After a mild winter, the year 2015 in Champagne was marked by numerous contrasts: a chilly spring was followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. The saving rains at the end of August enabled optimal ripening, revealing berries of remarkable generosity and balance.

Winemaking and aging

The winemaking process at Dom Pérignon strictly adheres to the principles of the traditional method, with an absolute commitment to faithfully representing the vintage. Prolonged maturation in the cellar, a resting period far exceeding the appellation’s standards, allows the champagne to develop its complexity and aromatic depth.

Blend

This exceptional champagne is the result of a secret blend of chardonnay and pinot noir.
