Tasting

Color
The color displays an intense garnet hue enhanced by subtle violet highlights.

Nose
The bouquet reveals a refined floral expression combining violet and rose. These delicate aromas mingle with notes of fresh fruit recalling blackcurrant bud and blueberry, giving the nose remarkable freshness.

Palate
The attack offers an elegant minerality that gives structure and precision to the palate. The wine opens up with generosity and harmony, lifted by discreet spicy nuances. The mineral, refined finish concludes the tasting with elegance.

Food and wine pairings
This Beaune Premier Cru pairs perfectly with duck breast with blackcurrants, a medallion of venison with lingonberries, or a beef stew with grapes. It also matches superbly with quail stuffed with foie gras or a platter of aged cheeses.

A mineral and elegant Beaune Premier Cru

The estate
Founded in 1720 in Beaune by Edme Champy, the Champy House is the oldest Burgundy wine merchant house. Owned by the AdVini group since 2016, it is the last wine production site located within the walls of Beaune.

The vineyard
The "Aux Cras" climat stretches along the left slope of the Montagne de Beaune, at around 250 meters above sea level. The vines enjoy an east to southeast exposure on clay-limestone soils typical of the appellation.

Winemaking and aging
The estate’s grapes undergo cold maceration before fermentation carried out with indigenous yeasts. Fermentation lasts 4 weeks. The Beaune Premier Cru "Aux Cras" is then aged in 6 Burgundian barrels, 25% of which are new.

Grape variety
This Burgundy wine is 100% Pinot Noir.
