The estate
Founded in 1750 in Beaune by Simon Verry, Domaine Chanson now farms a vineyard of approximately 88 to 90 hectares in Burgundy. The estate includes 43 to 45 historic hectares in Côte de Beaune and 45 hectares acquired in 2023 in Côte Chalonnaise. Owned by the Bollinger group since 1999, the domaine practices parcel-by-parcel vinification by climat. Côte de Beaune has been certified organic since 2024. Thierry Berger has served as Managing Director since 2025.
The vineyard
Climat La Dominode is one of the most renowned premier crus in the Savigny-Lès-Beaune appellation. The domaine owns around 1.6 hectares of east-facing vines there. The soils are made up of limestone marl and stones, providing a terroir well suited to the expression of pinot noir. This morning exposure encourages a gradual, harmonious ripening of the grapes.
The vintage
The year 2021 was cool and classic in Burgundy. The vintage was marked by devastating frosts in April, which significantly reduced yields across the region. Despite these difficult conditions, the grapes that survived benefited from full ripening thanks to an extended growing cycle. Harvest took place in mid-September under favorable sunny conditions, making it possible to bring in fruit of excellent health and fine maturity.
Vinification and aging
The Savigny-Lès-Beaune 1er cru "Dominode" 2021 is vinified with an approach that favors infusion over extraction. The harvest is carried out by hand, and the grapes are chilled as soon as they arrive at the winery to preserve their freshness. Fermentation is carried out with whole clusters, a technique that brings structure and complexity to the wine. Aging takes place in oak barrels for 17 to 19 months, with 30% new barrels, refining the tannic structure while respecting the expression of the terroir.
