The balance and freshness of a great Red wine from Saint-Émilion

The estate
It was in 2014 that Sylvie Cazes and her children acquired the Château Chauvin. Building on the work carried out by the Ondet family, the Cazes family has put all their energy and winemaking expertise at the service of this Saint-Émilion Grand Cru Classé. Since the 2014 vintage, the château Chavin has been adorned with a new label, inspired by the one issued in 1929 whose design captivated Sylvie Cazes. Cupid, the god of Love, is thus depicted, carrying a banner on which appears the emblematic lion of Saint-Émilion. This label thus pays tribute to the symbolism of Château Chauvin’s name, meaning « to be in love with one’s land ».

The vineyard
Château Chauvin’s vineyard is located in the northwest of the Saint-Émilion commune. The estate enjoys an exceptional location between Château Cheval Blanc and the Butte de Roi. The vineyard covers 15 hectares of vines averaging 30 years of age, planted on sandy-clay soils with a significant presence of iron pan over clay subsoils. Château Chauvin’s vineyard benefits from HVE level 3 (High Environmental Value) certification.

The vintage
The 2014 vintage was marked by early vine budburst followed by a mild and humid spring. Despite a cool and wet August, the splendid Indian summer that followed, with high temperatures, allowed the berries to reach ideal ripeness. Harvesting thus began on September 29 and concluded on October 10.

Vinification and aging
Pre-fermentation cold maceration for 2 to 5 days at around 8 °C. Alcoholic fermentation in temperature-controlled stainless steel tanks. Malolactic fermentation in barrel. 20 to 30 days of maceration. Gentle and slow extraction. Aging for 15 to 18 months in French oak barrels (40 % new).

Blend
Merlot (70 %), Cabernet Franc (22 %), Cabernet Sauvignon (8 %).
