Food and Wine Pairings
This gastronomic rosé pairs beautifully with a langoustine tagine with saffron or a pork tenderloin marinated with five spices, served alongside seasonal confit vegetables.

Serving and Cellaring
It is recommended to serve this wine between 8 and 10°C to fully appreciate its qualities. The cuvée can be cellared until around 2027.

The estate

The Château d'Estoublon, founded in 1489, was for a long time owned by the Counts of Les Baux. Acquired in 1999 by Ernest Schneider, it has been managed since 2019 by the Courbit, Prats (former owners of Château Cos d’Estournel), and Bruni-Sarkozy families.

Vineyard
The estate covers 300 hectares, with 17 dedicated to vines and 120 to olive trees. It is managed using sustainable and organic viticulture, on deep soils combining clay and limestone.

The wine
“1489” is a Coteaux d'Aix-en-Provence wine made from grapes grown on the slopes of the only volcano in Provence, at an altitude of 390 meters. The old vines (average age 50 years) benefit from a northern exposure and grow on marl-rich clay-limestone soils.

Vinification and Aging
The harvest, carried out by hand with great care, sometimes involves two passes on certain plots, followed by an additional sorting at the winery. Whole clusters are gently pressed, then the juice is cold-settled. The aging takes place in stainless steel tanks and oak barrels (225 and 500 liters), with a portion in new wood.
