Tasting notes
Colour
The colour reveals a deep red hue, enhanced by delicate violet nuances in its youth.
Nose
Wonderfully complex, the nose releases a bouquet of red and black fruits reminiscent of strawberry, raspberry, blackberry and blackcurrant. It is enriched by spicy notes of pepper, subtle floral touches, as well as aromas of thyme and garrigue evoking its terroir of origin, rounded off by a hint of game.
Palate
The attack is vibrant and full of vivacity, opening onto a fleshy mid-palate. The balance proves perfect between ripeness and freshness, supported by fine, silky and elegant tannins. The finish, long and mineral, extends with lingering spicy and floral notes.
Food and wine pairing
This red wine pairs wonderfully with grilled meats or barbecue. It will also enhance duck à l'orange, beef bourguignon, veal chops, or a beef tartare.
Service and storage
For optimal enjoyment of this 2023 vintage, it is recommended to serve it at a temperature between 16 and 17°C, taking care to decant it one to two hours beforehand. Ready to drink today, this wine will reach its peak between 2027 and 2031, and can be cellared until around 2033.
Burgundian elegance at the heart of the Languedoc by Domaine Anne Gros & Jean-Paul Tollot
The estate
Founded in 2006, Domaine Anne Gros & Jean-Paul Tollot is the result of the union of two renowned Burgundian winemakers who set off to explore the Languedoc. Located in Cazelles, this estate of around fifteen hectares, now expanded to 18 hectares, is run by Anne Gros and Jean-Paul Tollot, the current owners. A true benchmark of the appellation, the estate stands out for its unique approach combining the expertise and finesse of Burgundy with the richness of the southern terroir, thereby creating wines of great precision.
The vineyard
The cuvée comes from the Les Fontanilles plot, a vineyard of about three hectares facing north-west, at the foot of the Montagne Noire in the Minervois. Located at an altitude of 220 metres, the vines flourish amid the garrigue on complex soils composed of Assignan sandstone, marl and very stony limestone. The vineyard is managed using sustainable farming practices, prioritising respect for the soil and the environment, with exclusively manual and late harvests to ensure slow ripening.
Winemaking and aging
The winemaking process draws on Burgundian methods with full destemming. Fermentation takes place in stainless steel tanks under controlled temperature, thanks to the action of indigenous yeasts. The aging process is then split: 50% of the wine ages in oak barrels, while the remaining 50% is refined in stainless steel tanks to preserve the purity of the fruit before the final blend.
