The depth and refinement of a Chassagne-Montrachet red wine

The estate
Born from the union of two lineages firmly rooted in the Burgundy vineyards, Domaine Bader-Mimeur continues the legacy of Charles Bader, whose family was involved in wine trading, and Élise Mimeur, a descendant of Charles Mimeur, former owner of the renowned Château de Chassagne-Montrachet. Together, they shape an estate where tradition and rigorous quality standards converge.

The vineyard
This Burgundian estate covers an area of 8 hectares in the heart of the Chassagne-Montrachet appellation, 5 of which are located within the grounds of the Château. Pinot noir and chardonnay thrive on soils typical of the Côte de Beaune, in a preserved environment thanks to reasoned viticulture, mindful of the natural balance.

The wine
This Chassagne-Montrachet red is exclusively produced from the vines planted in the park of the Château de Chassagne-Montrachet. It accurately reflects the unique character of this emblematic terroir.

Vinification and aging
The harvest is carried out manually before total destemming of the bunches. Spontaneous alcoholic fermentation takes place in conical wooden vats, with a maceration of around two weeks, punctuated by manual punch-downs and pump-overs. The wine is then racked by gravity and transferred into barrels. Pressing is done gently in a pneumatic press, and the press wines are aged separately. Malolactic fermentation occurs naturally in barrels, followed by 16 to 18 months of aging in French oak barrels, about 20% of which are new.
