This white wine from France reveals a luminous pale yellow hue, enhanced by delicate golden highlights.

Nose
The aromatic bouquet opens with a lovely freshness of white fruits, evoking peach and pear, underscored by subtle hints of citrus. Barrel aging brings delicate nuances of hazelnut and toasted almond that integrate with great precision.

Palate
The attack reveals a texture that is both buttery and complex, perfectly balanced by a fine mineral tension typical of its limestone terroir. The finish, of remarkable length, extends elegantly with notes of citrus and stone fruit.

Food and Wine Pairing

This wine pairs beautifully with refined dishes such as poultry in cream sauce, white fish in a delicate sauce, or scallops, whether pan-seared, in ceviche, or served with a beurre blanc. It also enhances soft-rind cheeses as well as spring vegetables like asparagus or artichokes.

Service and Storage

For optimal enjoyment, this Bourgogne Chardonnay 2023 should be served at a temperature of around 12°C. Decanting briefly for about thirty minutes before serving allows its full aromatic complexity to unfold. Ready to drink now, this wine will reveal its full potential until around 2034, provided it is stored lying down in a cellar between 12 and 14°C, away from light and humidity fluctuations.

The Authentic Expression of Côte de Beaune Terroir by Domaine Ballot-Millot

The Estate

While the family's winemaking history began in 1630, the official founding of Domaine Ballot-Millot dates back to the early 18th century. Located in Meursault, in Burgundy, the estate spans about ten hectares. Since 2000, Charles Ballot has managed the domaine, succeeding his father Philippe. With an environmentally conscious approach, he has banned chemical herbicides in favor of mechanical soil work and is currently preparing to convert to organic farming. The domaine is now recognized for the consistency and great precision of its wines.

The Vineyard

The vines used to produce this Bourgogne grow on soils characteristic of the region, composed of limestone and clay-limestone marl. This particular geology gives the Chardonnay its balance between richness and minerality. The vineyard is managed according to sustainable practices, with mechanical soil work to preserve biodiversity, and the harvest is carried out exclusively by hand to ensure the integrity of the bunches and select the finest fruit.

The Vintage

2023 offered particularly favorable climatic conditions. This favorable weather allowed the grapes to reach optimal physiological ripeness, ensuring a harmonious development of the growing cycle and preserving the full freshness of the berries.

Winemaking and Aging

The fermentation of this Bourgogne Chardonnay 2023 takes place using indigenous yeasts, without thermal manipulation, in wooden vessels where malolactic fermentation also occurs. Aging continues for about twelve months in oak barrels, of which 25% are new, without any stirring of the lees. The wine is then transferred to stainless steel tanks for an additional six-month refining period. A light filtration is carried out just before bottling.
