I love the lemon curd richness of this remarkably structured and bold aligoté that easily handles a slug of new oak. The flinty freshness adds a lot to this on the medium-bodied palate and drives the long, fresh, citrus finish. Very limited production. From biodynamically grown grapes with Demeter certification. Drink or hold.

Tasting

Colour
The colour reveals a pale golden-yellow hue enhanced by green highlights, offering beautiful luminosity and great transparency.

Nose
Displaying great complexity, the nose opens with aromas of grapefruit, lychee and honeysuckle. It then evolves towards notes of citrus fruit (lemon, lime, bergamot), white peach and fresh bread, all underpinned by a saline, stony minerality.

Palate
The attack is slender and discreet, giving way to a concentrated, intense palate structured by a lively acidity reminiscent of salted lemon. The texture, both taut and elegant, extends into a remarkably persistent finish, marked by iodine and saline touches, floral nuances and a subtle hint of bitter almond.

Food and wine pairing

A true gastronomic wine, this cuvée pairs beautifully with a seafood platter (oysters, sea urchins), beechwood-smoked salmon or a mature dry goat's cheese. It will also wonderfully accompany Mediterranean dishes featuring citrus, artichokes or fish prepared without cream.

Service and storage

For optimal enjoyment, this Bourgogne Aligoté Doré "Presse Verticale 429" 2023 should be served at a temperature between 10 and 12°C, after decanting for about 30 minutes. Approachable from now, this white wine can be cellared until around 2030.

Other characteristics

This wine has undergone no fining, filtration or cold stabilization. It may therefore present a light natural deposit of tartrate crystals, which in no way affects its taste qualities.

The estate

The story of Domaine Boris Champy began in France in 1984, when Didier Montchovet founded the estate with a small 0.5-hectare plot in Burgundy. A pioneer, he turned his vineyard into the oldest certified biodynamic estate in the region. In 2019, Boris Champy, the current owner, took over the reins of the estate, located in the Hautes-Côtes de Beaune. Sharing the same environmental philosophy as his predecessor, he now oversees a vineyard of around 12 hectares, with the aim of showcasing the authentic expression of his high-altitude terroirs.

The vineyard

This white wine from Burgundy is made from plots located over 400 metres in altitude in the Hautes-Côtes de Beaune. The vines, planted at a high density of 10,000 vines per hectare, come from old massale selections. They thrive on marl and clay soils resting on a limestone bedrock. The vineyard is farmed biodynamically, without synthetic herbicides, within a preserved ecosystem that includes woodland, hedgerows and sheep to promote biodiversity.

The vintage

The year 2023 began with a mild winter followed by staggered budbreak in April. May, warmer than seasonal norms, favoured a beautiful flowering between late May and early June. Summer was marked by intense heat (up to 36°C) punctuated by localized rainfall. September, exceptionally warm, required a late harvest carried out at the end of the month, with the grapes in perfect health.

Winemaking and aging

The grapes are hand-harvested. The winemaking of the Bourgogne Aligoté Doré "Presse Verticale 429" 2023 stands out for its use of a historic vertical press, allowing for slow and gentle juice extraction. Fermentation takes place with indigenous yeasts. The wine is then aged on the lees for around 12 months in 600-litre oak barrels (a third of which are new), before continuing for a few months in stainless steel tanks.
