Colour
The colour reveals a brilliant golden yellow hue, enhanced by shimmering highlights.
Nose
The aromatic bouquet reveals itself as complex and nuanced. It exudes scents of white fruits such as pear and green apple, harmoniously blended with delicate notes of white flowers and citrus, particularly lemon zest. A pronounced minerality is accompanied by subtle brioche notes, a legacy of its ageing.
Palate
The palate offers remarkable liveliness and freshness, perfectly balanced by a seductive roundness and richness. Displaying lovely tension, the structure unfolds a finesse that blossoms with aeration. The exceptionally long finish stands out for its minerality, enveloped in a smooth, dense texture.
Food and wine pairing
This white wine pairs wonderfully with seafood and delicate fish, such as oysters, scallops or fish fillet in cream sauce. It also enhances white meats in sauce, poultry, as well as soft or matured cheeses such as fresh goat cheese and comté. It is also an excellent choice for an aperitif.
Service and storage
With its lovely structure, this Saint-Véran Village "Vieilles Vignes" 2023 can be enjoyed in its youth but will continue to gain complexity, drinking well until around 2029.

The estate
Founded in 1945 in the village of Fuissé, Domaine Cordier Père et Fils is a major name in the south of Burgundy. Now led by Christophe Cordier, this family estate spans over 31 hectares divided into 120 parcels across the Mâconnais. Driven by the conviction that human effort reveals natural potential, the current owner has elevated the estate to excellence through rigorous biodynamic viticulture and state-of-the-art facilities. Respect for the terroir and the preservation of its essence form the deep-rooted identity of this historic estate.
The vineyard
This wine comes from the Saint-Véran appellation, made from old vines rooted in a sun-drenched limestone terroir, a geological rarity in the region. The estate cultivates these plots according to biodynamic principles, favouring animal traction to preserve soil structure. Vegetation management is carried out through braiding, creating vegetal arches that protect the grapes, which are then harvested by hand with meticulous selection.
Winemaking and ageing
The making of the Saint-Véran Village "Vieilles Vignes" 2023 relies on a minimal-intervention approach. Fermentation takes place exclusively with indigenous yeasts. The wine then rests on its original lees, without excessive racking. Ageing continues for 18 months in oak barrels, with a measured proportion of 10 to 15% new wood to preserve the freshness of the fruit. Finally, bottling is carried out by gravity, without fining and with very light filtration.
