This Bonnes-Mares pairs perfectly with fine red meat dishes, feathered game, and mature cheese. Its structure and complex aromas also harmonize with dishes in sauce with mushrooms.
Service and storage
The Bonnes-Mares Grand Cru 2022 should ideally be served at a temperature of 16-18°C. Decanting for one hour allows it to express its full aromatic complexity. This wine is expected to reach its peak between 2034 and 2036.
A great Grand Cru from Burgundy from an exceptional terroir
The producer
Founded in 1956 by Charles Mortet in Gevrey-Chambertin and managed by his son Denis from 1993, the Burgundy estate Domaine Denis Mortet today extends over 16 hectares, distributed across Gevrey-Chambertin, Chambolle-Musigny, Vougeot, Marsannay, and Fixin. Since 2006, it has been managed by Arnaud Mortet together with his mother Laurence and his sister Clémence, and possesses prestigious plots, including the Chambertin, Bonnes-Mares, and Mazis-Chambertin Grand Crus.
The vineyard
The Bonnes-Mares comes from a plot in the center of the slope of Chambolle-Musigny, on the famous "terres blanches". These pebbly and very limestone-rich soils rest on pure clay and give the wine its distinctive minerality. The vines, averaging 70 years of age, extend over 35 ares and are cultivated according to organic farming principles, exclusively with horse plowing and organic fertilizers.
Winemaking and ageing
Hand-harvesting in small crates allows for a strict selection of the grapes. The winemaking of the Bonnes-Mares Grand Cru 2022 is carried out with partial destemming and exclusively indigenous yeasts. Pump-overs and punch-downs are practiced with moderation. Ageing takes place for 18 months in oak barrels, 80% of which are new barrels and 20% one-wine barrels.
